Orange Glazed Carrots

This is a favorite side around here. We just love it beyond what words could describe. It is super easy to make and is also really quick for those nights when you need to throw something together for the family or to impress unexpected guests. I ALWAYS keep several cans of carrots on hand just for those times when I get a call at the last minute from someone inviting themselves to supper.

Yes, people invite themselves to supper at my house often. I am always asked…”Does that not bother you?”

No, it really doesn’t. There is always room for one more at my table. Always. I love nothing better than to spend time with friends and family…except being able to cook for them. So, let’s get to cooking!

Orange Glazed carrots ingredients

You will need 2 cans of sliced carrots, some butter, orange marmalade and just a dash of cinnamon. If you don’t feed the masses, or have a teenage boy living under your roof, both of which I do…you can cut this recipe in half to feed a normal amount of people. I am not sure what a normal amount of people for dinner is though, it has never happened here.

Melt the butter, orange marmalade and cinnamon over medium heat in a saucepan until it is melted. It will look like a sauce and smell wonderful. Just make sure to stir it often so it doesn’t burn.

Drain the carrots and then add them to the butter/orange marmalade mixture.

Simmer, stirring often until the carrots are heated through and glazed with the sauce.

Serve while hot.

This will be enough to feed 6-8 people, depending upon the appetites of the people that you feed.

Orange Glazed Carrots

2 (15 oz.) cans sliced carrots

2 Tablespoons butter

4 Tablespoons Orange Marmalade

Dash of Cinnamon

Mix the butter, orange marmalade and cinnamon in a saucepan. Heat over medium heat until it all melts and becomes a sauce, stir often. Add the carrots and heat until the carrots are hot and glazed.

Serve immediately.

My list includes avocados, asparagus, Brussels sprouts, tomatoes, corn, sweet potatoes and onions. I can’t wait to cook up some delicious goodies I have been craving!

Vegetable Hummus Pizza

One of my “things” this year is to eat more fruits and vegetables. To eat a little healthier.

I don’t want to call it a goal, it isn’t something I want to strive for. It is something I want to DO every day. While I am a southerner and I love foods fried and rich, I also know that isn’t all you can eat on a daily basis. So, to help me conquer my daily quest, I have been trying out Tribe Hummus and all the different ways to eat it.

Veggie Sticks – Slice up your favorite vegetables and give it some zest with Tribe’s Roasted Red Pepper Hummus. This refreshing snack will keep you satisfied and feeling great.

·         Apple Slices – Trick your taste buds and try dipping this juicy treat into Tribe’s Classic Hummus. The sweet and salty taste will be sure to keep you pleased.

·         Pita Chips – This healthy alternative to traditional potato chips goes great with any flavor, including Tribe’s Roasted Garlic Hummus.

Along with the great treats above, I knew I wanted to use it in a recipe. Something a little different. There is always the tried and true wraps that incorporates hummus instead of mayonnaise, but what about a pizza? A vegetarian pizza! This is so easy to throw together that it shouldn’t even be classified as a recipe…and it turned out FABULOUS!

The hardest part is going to be deciding which of the 13 flavors Tribe has to offer. For this pizza I decided on the Roasted Garlic. But one of the MUST try flavors in my book is the Zesty Spice and Garlic! I think it has to be my favorite. Then I gathered up all the vegetables I wanted as toppings. Onion, Bell Pepper, Mushrooms, Black Olives, Tomatoes…Yum! And, to make it even quicker and easier, I opted to use a ready made thin crust.

Spread a layer of hummus on the crust.

Sprinkle with shredded cheese. Any variety will do.

Slice the vegetables thinly.

Layer the vegetables on the pizza however you choose.

Bake on 400 degrees for 10-15 minutes.

Serve and Enjoy!!

While we are not vegetarians here at The Post-It Place we do eat meat-free meals on a regular basis. Last April when the tornadoes ravaged through a local community known as Collegdale TN one of my dear friends had major damage to his farm. Which also happens to be where his family lives and works. We gathered a crew together and went to help out in any way that we could and knowing that most everyone there would be a vegetarian I turned to Morning Star Farms line of products to prepare meals to feed the crew. Talk about versatile! I chose their crumbles baked and slathered with my homemade BBQ sauce for BBQ sandwiches. Everyone raved about the meal and even the ones who were not vegetarians preferred that over the pulled pork sandwiches I had fixed for them.

Morning Star Farms Veggie Meatballs

Since then I have used Morning Star Farms for a variety of meals for my family and for others. When I heard that MorningStar Farms Meal Starters Veggie Meatballs™ and Veggie Dogs™ were now available I was THRILLED!! The Veggie Meatballs have 80% less fat the leading frozen fully cooked meatballs, and the Veggie Dogs are a low-fat alternative to real meat dogs. And we all know that meatballs are one of my families favorite meals. They are easy and delicious and are super easy to adapt to a Meatless Monday Meal. My family didn’t even know that they were eating veggie meatballs.

Ingredients

2 tsp minced garlic
2   (8-ounce) cans pineapple, save the juice
1   diced onion
1/2 cup Dijon mustard
1 lb Morning Star Farms Veggie Meatballs
4 cups ketchup
1/4 cup water
2 tablespoons Worcestershire sauce
1 cup of sugar
1/4 cup white Vinegar
2 TBSP Black pepper
3 tablespoons pineapple juice

Directions

Throw everything  except for the meatballs in a slow-cooker, mix well  then add the meatballs and cook on High for 4 hours or Low for 8 hours.
