Today is a big day!

Stephanie

This little bit was born 22 years ago today. I took her with me to vote yesterday because she had never done so before and then she exercised her right as a citizen and voted herself!!

When she was born she would fit in the palm of your hand. She is a little bigger than that now, but not by much. She may be my niece but she has always been such a huge part of my life that she is like one of my own kids. So while she may be little bitty, she holds a big chunk of our hearts and I want to wish her the happiest of days today and hope all her wishes come true!!

And another birthday…

Charlie

Meet Charlie! Today is his birthday as well but yesterday was his big day.

He was adopted by my mother from an animal shelter yesterday, then took a trip to Petco and got a spa treatment. I have to say, Petco in Dalton GA was so fabulous!! He needed a bath something terrible and when they found out he had just found his forever home and was on his way home for the very first time they gave him the works, took super great care of him and pampered him silly.

And, I can’t leave out Chuka.

As we were celebrating Stephanie’s birthday he felt a little left out. So, he decided to grab something similar to one of those knee scooters for sale and go for a swim! He was a little unsure about it at first but he eventually came to love being in the pool with everyone. I think we ay be seeing him floating around catching some rays more often from now on…who knows, he may be surfing next.

Hope you have a great day!!

Carter's Lake

Today was Engineer’s Day at Carter’s Lake. It is a yearly event for the employees and their families of the Corps of Engineers, Carters Project and since that is where Erin works we all went. Each employee was to sign up to bring a covered dish. The meat and drinks were covered by the Corp. So….Erin signed up to carry a dessert.

Well, at 10 PM last night Erin decided to start to work on what she was going to carry. Let me tell you, 10PM is NOT the time to start. She didn’t have all the ingredients she needed and it isn’t like you can just run out to an all night grocery store around here.

So, at 7 AM this morning I was deciding what I was going to cook and carry on Erin’s behalf. All I can say is thank goodness for Christy Jordan at Southern Plate and her friend Bill Gent, a regular reader who contributed a easy dessert recipe that sounded like something I could make quickly and easily. I ran out to the grocery store, grabbed everything I needed and was done and ready to go by 10 AM!

I made a Cherry, Apple and Peach Cream Cheese Cobbler.

Thanks again to Christy and Bill, you saved the day!

The kids even got to have fun swimming and playing frisbee.

I am exhausted! We spent the weekend out and about playing. We went over to the town of Summerville/Trion to my cousins house on Saturday to spend the WHOLE day swimming and cooking and eating. When I say that the grill was going ALL day, I am not exaggerating. We grilled marinated ribs, rubbed ribs, BBQ ribs, marinated chicken, chicken wings and we grilled all the vegetables. I say we pretty loosely here. Mr. Mike did most of the grillin and I did most of the preparing.

We dragged my niece “College Kid” along with us and celebrated her birthday while we were there. I can’t believe that she is 19. It seems just yesterday that she was born.

Bric even got to go which is a real rarity. He is always on call and rarely gets to go with us when we decide on having a fun day. It was so nice to spend the day just hanging out having fun with him included. Hopefully before too long that will change a little.

My cousin’s littlest one decided his new name was “Big Guy”. She called him that all day, it was so funny. But after he spent most of his time throwing the kids in the pool and letting them jump off of his shoulders I think he deserved the title.

I think these two were plotting something. Which would be nothing new.

So, what did you do this weekend?
