Summer is just about over. We have plans to go to Hiawassee this weekend for some great food, family, friends, pickin and grinnin. It is the last big hooha of the year up there and due to age and health issues of my uncle it may just be the last one ever.

I have to decide what dish I am going to take and while I was browsing around I thought perhaps you might need to make the same kind of decision for a hooha that you are going to attend this weekend. So, I though I would bring to you a list of my 5 favorite summer dishes, since this is the last blowout of the summer and all.

1.) Spaghetti Salad

This dish is super easy to make, feeds a lot of people and is delicious. It also has a “light feel” to it and can be served warm or cold. That makes it the perfect dish to carry to any hooha you attend. Also, it only has 5 ingredients so it is economical to boot.

2.) Summer Fruit Salad

Another favorite in our house and to take on the road. Again, 5 ingredients, easy to make but it has to be kept cold. Light, refreshing and ohhh so good.

3.) Vidalia Onion Pie

It is getting harder and harder to find Vidalia’s. They are only here for a short time so we have to take advantage while we can. If you can still get your hands on a few, grab them and make this pie! I promise, you will groan at the goodness.

4.) Marinated Vegetables

This was one of my Granny’s favorites. You could always count on her having a bowl full in her refrigerator when you went to visit in the summer. It just evokes fond memories of sitting on the front porch snacking away…that it’s good doesn’t hurt either.

5.) Kool-Aid Pie

What can I say? Great dessert. Easy to make. 4 ingredients. And you can make it any flavor that you want.

All of these recipes are from the earlier days of The Post-It Place so none of them have photos. I need to go back and rectify that for ya’ll one of these days. I can promise that they won’t disappoint though. So, get out from behind the computer screen, quit worrying about Forex trading software and enjoy the last remaining days of summer with some family, friends and some good food!

It has been interesting cooking without an oven to say the least. Planning every meal around only using the stove top and the crockpot has required some creative thinking at times. I really haven’t ever thought about just how much I use my oven…but I can guarantee that I will never take it for granted again.

Not thinking, I went and bought specific ingredients to make a recipe to share with all of you. I went to two separate grocery stores looking for one of the ingredients. I get home and start to put everything together…and then remembered that I can’t cook it. My oven doesn’t work. DUH Jyl!

So, I will be spending today looking for the part that we think we need to fix the oven. I do know that I have to order it because no one locally or in the surrounding areas carries the part that I need. It is at times like this that I could almost hate living in the country. Almost I said…the concrete jungle is no place for me.

Today, Tate is attending a karate tournament in Tennessee, he asked that I not go. He likes having that little bit of independence going on his own with the instructors from his studio. I was a little bit relieved that I didn’t have to make the long drive and spend the day sitting on the bleachers after wrenching my back several days ago. I am finally able to walk ALMOST straight again but I know that if I went I would be walking crooked once again. I just hope he tries hard, does his best and comes home with a first place trophy. He has been working really hard lately to attain that goal. He has several second, third and fourths but that first has been elusive so far.

Erin will be playing Park Ranger today. She starts back to college on Monday…she and I have both decided that this was the shortest summer ever. It just seems like it has flown by and we haven’t gotten everything done that we wanted to do. She has loved her job with the US Army Corps of Engineers and I am so grateful that she has been able to have the experience. I think her favorite part of her job has been being able to give people tickets.

All that to say…I am going to be home ALONE today!! WooHoo, that is a very rare occurrence, but since Bric also has some things to do it is going to happen today. Now I just have to decide how I am going to totally waste all of that time. And yes, I am seriously going to waste every minute of it doing whatever I want to do without being disturbed!

It has been HOT here. Seriously Hot. If I am hot, I can’t sleep. I like my room to be like an icebox as a matter of fact. So, while I would prefer to install a refrigeration unit in there,  Bric laid down the law on that one. We have a ceiling fan that runs 24/7/365 but it is just about worn out and we are on the lookout for a new one. Because if it decides to go on the blitz and there is no air at all moving in there, there is going to be a lot of unhappy people in my house. Cause when Mama ain’t happy, ain’t no one happy!

The higher the power, the better. I could live with buying one of the the highest powered Hansen Wholesale Ceiling Fans that they have available. Here is how it works…I keep my bedroom door shut and a fan running at all times. That way it stays about 10 degrees cooler in there than anywhere else in the house. If I add a second fan, I can get another few degrees out of it. And I can sleep happily.

I need to add a few more ceiling fans to a few of the other rooms in the house, the kids all say that they don’t want one, that their room stay cool enough as it is but the kitchen and dining room could use a little more air moving throughout them. Of course if it stays above 100 degrees as it has been for the last couple of weeks, I am just not sure how much it’s going to help.

southern by grace

Heat in the South is different from heat in the North. People that aren’t from around here don’t really get that until they come for a visit in July or August.

Then, they get it…and they truly understand.

See, it is HUMID. It is a heavy, smothering heat. And it is here early this year.

I was in the grocery store earlier this week and there were a couple of older men in line in front of me. I wasn’t trying to be nosy but I couldn’t help but hear their conversation. It went something like this:

Man#1: “Shore is hot”

Man # 2: “Yeah tis”

Man # 1: “Gotta garden a goin this year?”

Man # 2: “Naw, its too hot this year for me ta get out thar much.”

Man # 1: “Yeah, bought make ya so sluggish that ya was born tired and raised lazy.”
