Strawberry Bread

When I make this bread it gets really quiet around my house. That means I make it often! Quiet around this place is SACRED! Usually there is a dull roar. But a roar none-the-less. And at times it is louder around here than a rock concert. So if I make something where everyone just sits around savoring the goodness and doesn’t say a word, I am going to make it often and just enjoy the silence that comes with it.

When I bake this bread it makes 3 loaves…1 large, 2 smaller. And those 3 loaves never last more than an hour.

Seriously, it is just that good.

You have to go make it now…and when it comes out of the oven and you cut into it, just sit back and listen. Listen to the silence. I will sit here and wait for the thanks…

To make this wonderful bread you are going to need self-rising flour, sugar, ground cinnamon, eggs, oil, and strawberries.

I am using frozen strawberries but you can use fresh and it will still work just fine.

Mix all the dry ingredients in a large bowl.

Mix all the wet ingredients in a separate bowl.

Then mix the two bowls together.

Grease and Flour your pans, pour the mix in and bake.

It is that easy! Even your kids could make this…perfect for Mother’s Day!

Strawberry Bread

3 cups self-rising flour

2 cups sugar

1 teaspoon ground cinnamon

3 eggs

1 cup vegetable oil

10 ounces of frozen sliced strawberries, thawed (or 1 1/2 cups fresh sliced strawberries)

Mix the flour, sugar and cinnamon together in a LARGE bowl. Then mix the eggs, oil and strawberries together in a separate bowl. Combine the wet ingredients into the bowl with the dry ingredients, stirring until mixed well. Grease and flour 2 large or 3 small loaf pans. Pour batter into pans until they are half full. Bake at 350 degrees for 1 hour.

Strawberry season is just about gone. I am going to be so sad…there is just nothing better than a basket of fresh picked strawberries and an evening on the porch sharing them with your loved ones.

I mean really, who could eat just one? And how could you walk by these and not give in to temptation?

I personally just can’t do it.

Kinda like those la flor dominicana cigars that my granddaddy didn’t seem to be able to resist.

Sweet. Succulent. Juicy. Flavorful.

And I think I have eaten my weight in them today alone!

See, my sisters and I and two of my nieces all piled in and went to a strawberry farm today.

It was our intention to pick enough for one of my nieces birthday party coming up this weekend. And well…we had to sample as we went. And then we had to sample some more.It’s a good thing they don’t weigh you as you go in and then again as you leave.

And then we had to pick a few extra because we all decided we needed a few for later. Just a few. Seriously.

We had a great time at Payne Farms in Calhoun GA. If you are looking for some fresh from the field strawberries it is a great place to visit!! But you better hurry before they are all gone.

 

 

 

Growing up I can remember my daddy making one of the best strawberry cakes. For several years after my Daddy died I had that cake on my mind. I thought I could remember how he made it but wasn’t sure. Then I forgot about how bad I wanted to make it. Until last week when I came home with a LARGE box of fresh strawberries. So, I set out on a journey to make my Daddy’s Strawberry Cake. I called my Mom to discuss it with her. At first she was like I can’t really remember what he did to it. Then when I gave her my idea of how it was made she agreed. THEN…then I made it. And we tasted it. And I could see my Daddy standing there grinning. I had made it and it was perfection!!

Here is how it’s done:

Make a yellow or white cake mix and bake according to directions.

Poke holes all over the cake.

Pour sweetened condensed milk all over the cake.

Pour 1 can of sweetened condensed milk all over the cake.

You want it to cover the whole cake and soak in.

Ohhh, this is gonna be good!

Cut up your strawberries and add a little sugar so they make “juice”.

I had to sneak a little bowl and eat them.

I mean really, how can you resist fresh strawberries?

Add the strawberries and some juice to the top…

Until it is completely covered.

The juice will soak into the cake and you will think you have died and gone to heaven with each bite.

If that actually happens please tell my Daddy I said Hi and I miss him!

Throw a dollop of cool whip on top and you have perfection!!
