And just so you know…the 50 pounds I would gain would be totally worth it.

I love lemon desserts and I love pound cake, combine the two and I am in heaven. Which is why I don't make this cake very often. I find myself snatching a piece every time I walk through the kitchen and then I get sick from eating so much. It is like a drug, one you just can't get enough of. Bric is just as bad. We seriously might as well cut the cake in half and dig in because we know that is eventually what is going to happen anyway. Guess it just makes us feel better to take a little at a time.

 Anyway, as good as it is, you would think you have to spend hours making it. It is really easy though. You need some sugar, sour cream, a white cake mix, vegetable oil, lemon extract and eggs.

 Mix all the ingredients together. Your batter will be pretty thick, that is normal. And the way you want it to be.

 Grease and flour your pan.

Please use shortening to grease your pan. If you use oil or spray your cake will stick.

Trust me on this.

Then pour your batter into the pan.

 Bake at 325 degrees for 45 minutes to an hour.

Make a glaze out of powdered sugar and half and half, then top with the glaze.

And you have a gorgeous cake that you aren't going to be able to stay out of. If you make it for company I suggest putting it right where you will know where it is. That way you will actually forget where you put it and be able to stay out of it. At least that is the way it goes in my house anytime I put something where I just know I will be able to find it. I am currently looking for an iTunes gift card that has been lost for a few months now. I distinctly remember telling myself that if I put it “right here” I will remember exactly where it was. Ahhh, the joys of aging.

LEMON POUND CAKE

1 box white cake mix

8 ounces sour cream

1/2 cup sugar

3/4 cup oil

4 eggs

2 tsp Lemon extract

Mix all the ingredients together, adding the eggs one at a time. Grease and flour a bundt pan, then pour batter in. Bake on 325 degrees for 45 minutes to one hour. Let cool completely and then glaze.

GLAZE

2 cups powdered sugar

3-4 tablespoons half and half

Place powdered sugar in a bowl, adding one tablespoon of half and half at a time, mix together really well. You want it to be really thick, then I heat it for about 20-30 seconds in the microwave to make it more “pourable”. Once it cools on the cake it will be thick and pretty.

You can use regular milk, we just prefer using half and half because it gives it a little more depth. You can also use a little more liquid if you prefer your glaze to be thinner. Again, it is our preference for it to be thicker. It just looks prettier to me and it stays better.

In the past when we have done loaded potatoes it has been the typical butter, sour cream, bacon, chives and BBQ meat. So when I was getting ready for dinner the other night I thought “Hmmm, how can I change this up a little?”

As I was browsing to see what sounded good I found a package of Hillshire Farms Beef Smoked Sausage and thought “What the heck!”

Makes for a easy, delicious and filling meal in itself. AND, it is BUDGET Friendly!! I can often find the Hillshire Farm products on a good sale and paired with coupons can get it at a really good price. Total cost for this meal for 4, less than $4. That is under $1 per person!!

Ingredients:

Potatoes, baked

butter

sour cream

2 onions

Hillshire Farms Beef Smoked Sausage

shredded cheese

 

Directions:

Bake your potatoes (I bake mine on 450 for one hour). While your potatoes are baking slice 2 onions into thin slivers. Chop the sausage into small cubes. In a skillet on medium heat saute the onions and sausage until the onions are caramelized.

Cut a potato in half, add sour cream and butter as desired, top with caramelized onions and beef smoked sausage mix then add some shredded cheese to the top.

I think you will really like this. It was a huge hit around here and will definitely be a regularly scheduled meal.

Sweet Roll Sliders, Loaded Potato Casserole and Roasted Asparagus
OhMyStinkinHeck! I can’t seem to get enough of these potatoes, it’s like a really bad habit that you want to break but when no one is looking you go back for more. And more. And more. And more. It has gotten to where when people are coming for dinner they ask “are you making those really good potatoes?” Ohhh, I most certainly can! (shhh, don’t tell, because in my book any excuse to make them is a GREAT excuse!)
They are easy to make and you will be so glad you did. Life just wouldn’t be complete without having these at least once, or a thousand times!

Mix together the cheese, bacon, sour cream and ranch. I just mix mine all in the pan I am going to cook it in…and I use a lot of aluminum pans. I have a friend that works for the company that makes them and can get a really good deal which makes for easy clean up and they can be recycled!

It’s going to look like a gloppy mess, but I assure you, they are divine!

Add in the hashbrowns and mix well.

Bake on 400 degrees for about an hour.

Ingredients:
2 (16oz) containers sour cream
2 cups cheddar cheese, shredded
2 (3oz) bags real bacon bits
2 packages Ranch Dip mix
1 large (28 – 30oz) bag frozen hash brown potatoes – shredded kind
Directions:
Combine first 4 ingredients, then mix in hash browns.  Spread into a 9×13 pan.  Bake at 400 for about 60 minutes. If you want to make several, these freeze great, then just take out of the freezer and bake when you are ready.

Today’s recipe is one of those OH MY STINKIN HECK delicious ones that everyone will ask where you found the recipe and will you share it. Me, I got it from my friends at Nestle. Yes, I can say they are my friends…it isn’t like they read my blog to dispute that fact so trust me when I say, They are my friends.

You can be the hit of the party with this full-flavored take on the classic baked potato with all the fixin’s. The  Carnation milk provides a creamy texture to a mix of hearty potatoes, cheddar cheese, bacon and green onions. With this dish there are no left-overs. NONE. My Tate ate 3 helpings. Yep, it really is good.

Loaded Potato Potluck Favorite

Ingredients:

* 8 medium potatoes (about 2 1/2 to 3 lb. total), peeled and cut into 1-inch chunks
* 1 cup NESTLÉ® CARNATION® Evaporated Milk
* 1/2 cup sour cream
* 1 teaspoon salt
* 1/2 teaspoon ground black pepper
* 2 cups (8-oz. pkg.) shredded cheddar cheese, divided
* 6 slices bacon, cooked and crumbled, divided
* Sliced green onions (optional)

Directions:

PLACE potatoes in large saucepan. Cover with water; bring to a boil. Cook over medium-high heat for 15 to 20 minutes or until tender; drain.

PREHEAT oven to 350° F. Grease 2 1/2- to 3-quart casserole dish.

RETURN potatoes to saucepan; add evaporated milk, sour cream, salt and pepper. Beat with hand-held mixer until smooth. Stir in 1 1/2 cups cheese and half of bacon. Spoon mixture into prepared casserole dish.

BAKE for 20 to 25 minutes or until heated through. Top with remaining 1/2 cup cheese, remaining bacon and green onions. Bake for an additional 3 minutes or until cheese is melted.

TIP:
• This casserole can be assembled ahead of time and refrigerated. Cover with foil and bake at 350° F for 40 to 45 minutes or until heated. Uncover; top with cheese, bacon and green onions; bake for an additional 3 minutes or until cheese is melted.
