Move over Bric, I have a new love!

Cinnamon Honey Fried Plantains

And OhMyStinkinHeck are they ever good!

Such an easy and delicious snack or desert without a ton of calories. The problem is, we all love them. So I have to make a ton in order for everyone to get their fill…or only make them when no one else is at home so I can have them all to myself!

There are no right or wrong measurements here. Which is one of the reasons these are so easy to make.

Plantains look a lot like a banana. But they are much harder to peel, the skin is much thicker. To open the plantains, I cut off each end and then I run a slit down the side with my knife and open them that way. Whether it is correct or not, it is how I find it easiest.

Once I have the peeling off I slice them at a diagonal.

I melt about 2 tablespoons of coconut oil over medium heat in a large frying pan. You can use other oil, I just happen to like coconut oil for these. The key is to make sure not to have your oil too hot. I am always tempted to turn it up so they will cook faster, but slow and patient is the best. You also don’t want to crowd them in the pan, let them breathe. It also makes it much easier when the time comes to turn them over.

And use a light hand…otherwise they just mush up and fall apart. You want them to brown on each side, and I turn mine pretty often just to make sure they cook evenly.

Once they are browned to your liking, remove from the pan and allow to drain on a paper towel, then sprinkle with a little cinnamon powder.

And then drizzle with honey.

And they are now ready to eat!

I haven’t written about it in awhile but I am still working towards a healthier version of me. I gave up on the Zumba though, it just about killed me. I am sticking to the treadmill…it is much more my pace and I don’t have to worry about making my body move in ways that were designed for a size 2 person with coordination that I have never possessed.

One of the things that I have had the hardest time with is snack foods. When I snack I typically want crispy, salty type items. Yep, like chips. So in my quest to find something satisfying I found out about Old London. The Roasted Garlic Melba Snacks are my favorite!! Solves my craving, is filling, and tastes great. All of their snacks that I have tried are really good though…the kids particularly like the bagel chips.

One of the things that I have found with Melba toast is that they make great little sandwiches. Add a piece of turkey and some Swiss cheese between two Melba toast slices and you have a great healthy snack that is super quick and easy to throw together. When it comes to snacks things in a bag never last long around here. So after only a day or two after a grocery trip…there never seems to be anything left. Because of that I took to coming up with some great snacks that everyone loves that are affordable, easy and quick to make. One of our very favorites is something that we call Marshmallow Toasties.There really isn’t a “recipe” involved in making them either, it is basically just assembly. Here, let me show you:

Put some saltine crackers on a baking sheet or in any other pan you might have handy.

peanut butter

Then smear some peanut butter on top of each one.

Then, stick a marshmallow on top

After you have them all assembled you simply stick them in the oven on broil for about 4-5 minutes.

You will know that they are done when the top is all toasty and brown.

Simple. Easy. Delicious. Ooey. Gooey. Sweet. Salty.

It covers it all!

Make sure you eat them while they are still a little warm, that is my favorite way!
