I think there must be a coven of Vampires close by because I have been craving this for a few weeks.

It was one of those nagging cravings that just wouldn’t go away. So, off I go to the store to gather the ingredients and started photographing away so I could share this with you.

We love it paired with some Italian Pork Chops but it works with almost any type of meat.

Yep, it is that easy.

Even though it looks a little labor intensive, it really isn’t. I use Apple Cider Vinegar since I don’t drink. After I quit drinking 16 years ago it just became a personal decision on a daily basis not to partake in things with alcohol in them. So, either way you choose to make this dish it will turn out wonderful.

GARLIC ONION SAUCE PASTA

12 large cloves garlic, peeled

1/2 cup butter

1 tablespoon olive oil

1 pound sweet onions (approx. 2 large)

1 tablespoon honey

1/4 cup Apple Cider Vinegar or Marsala cooking wine

Pasta of choice, cooked

Directions:

Peel garlic cloves, trim off ends. Peel and rough chop onions. Place the onions and garlic in food processor and pulse until minced.

Heat butter and oil in large skillet over medium heat. Add onions and garlic, cook until just soft. Add honey, and reduce the heat to low. Cook, uncovered, 30 minutes, stirring occasionally. Add wine or vinegar and cook 10 minutes more. Add to cooked pasta of your choice. I prefer a textured pasta to hold all those wonderful flavors.

 

 

 

It is a dip kinda weekend. Some people are celebrating that big football game…us, we are celebrating company. Several folks will be dropping in today for a visit and that certain football game won’t even be on here. We aren’t a big sports family, we are more of a nerd family.But while we may not be sports fans, we will take any opportunity to partake in some good food!

 Chicken Cabbage Bruschetta

This recipe is a HUGE favorite at our house. It is requested often and is super easy to make.

Gather up your ingredients.

Place chicken in slow cooker with salt and pepper to taste, drizzled with a little olive oil. Cook on high for 2 hours.

Once the chicken has cooked through remove and shred it, then add back into the slow cooker.

Here is a cool tip: Place your chicken in your stand mixer with the cookie paddle attached.  Turn it onto speed 4-6 and in just 20 seconds you’ll have perfect, restaurant style shredded chicken. Make sure the chicken is warm/hot before you shred it.

Saute the cabbage and onions on stove top in a large frying pan until softened then place in crockpot with the chicken.

Franks RedHot Sauce

Add the Frank’s RedHot Sauce, Ketchup and bullion cubes.

Mix well and cook on low for about an hour.

Serve warm with corn chips or tortilla chips. Just depends on your taste. OR, you can toast some French bread and pile it on top for an extra special appetizer and it becomes Chicken Cabbage Bruschetta!

6 Chicken Breasts or large pack of Chicken Tenderloins

1/2 head of a large cabbage (shredded)

2-3 large onions (diced)

3 bullion cubbes

1 small bottle of ketchup

3 teaspoons Frank’s RedHot Sauce

 I love one dish meals. I love that they cause less of a mess to clean, they are usually economical and they usually have that comfort food feel about them. This one is stick to your ribs hearty, great for a cold day and tastes great!

Shhh, don’t tell but I also love the fact that I can hide lots of vegetables in the dish.

It is also easy on the budget if you plan it right. Mueller’s typically has coupons for their noodles and when you can find them buy one get one free you can typically get them for free or next to free. I can sometimes also find Johnsonville coupons and paired with a good sale you can get a great deal ( I have about 10 packs in my freezer because we love it!). I got the ground beef marked down and a large bag of carrots we are working on for a very good price. If I had restaurant funding I could be content to cook all day and do so on a budget. Of course being around my house is like running a restaurant some days.

My recipe is more of a guideline, there is no perfect measurement that is going to make or break this dish. You can also change up the ingredients a little to suit the tastes of your family.

1 package Johnsonville Italian Sausage, 1 pound ground beef, 1 onion (I was out but had chopped green onions and used those), 1 bell pepper, carrots, artichokes, garlic, diced tomatoes, tomato sauce, tomato paste, Italian seasoning and noodles.  ( I forgot to get my spices, sauce and paste out for the picture)

 Chop all of the vegetables and place in dutch oven with the meats. Cook thoroughly.

I was lucky and found lean ground beef on sale so I did not have to drain the grease off of mine. If you have a lot of grease you will want to drain some of it off. Leave a little for flavor though.

Add in the diced tomatoes (do NOT drain), tomato sauce and tomato paste and Italian seasoning and garlic to taste. I would use 2 cans of each. I had some frozen diced tomatoes and tomato sauce that I used. If you want to make it even easier, just use a large jar of spaghetti sauce and a can of diced tomatoes.

Just dump your noodles in the pot with every thing else.

Yep, you don’t have to boil them. They will cook in the sauce and taste better than you ever imagined!

Dutch Oven Pasta

Oh Goodness!

Just look at it, and wait till you smell it!

Allow it to simmer for about 30 minutes and the noodles are cooked through.

ONE DISH PASTA DELISH

1 package Johnsonville Italian Sausage

1 pound ground beef

1 onion

1 bell pepper

2 – 3 carrots

1 can of artichoke hearts

garlic, to taste

2 cans each – diced tomatoes, tomato sauce, tomato paste (do not drain the diced tomatoes…or you can use one large jar of spaghetti sauce)

Italian seasoning, to taste

noodles (any kind will work although I have never tried using long noodles)

DIRECTIONS:

Cook the meats and vegetables until browned. Add in the tomato products, garlic and spices. Mix well. Add in the uncooked noodles, mix well. Allow to simmer approx. 30 minutes.

Crockpot Meatballs

What an ugly picture. I know my picture is horrible but it is what it is. I tried several times but just couldn’t get one that was any better…until I plated them. Ok, maybe that one just looks better because I was ready to eat! Wouldn’t it be great if we could use some of that scanner software to transport food back and forth? Because let me tell you, these are fabulous, regardless of how ugly my picture is! This is Tate’s most favorite dish. He asks for it often and can never seem to get enough of them. Don’t get me wrong, we all love them, they are just Tate’s most favorite dish ever.

They are easy to make too. Don’t let the ingredient list fool you, they aren’t complicated to make at all! I always double or triple the recipe because one batch is never enough. And when one batch isn’t enough, you know it’s a good recipe. Yummm, let’s go eat!

Ingredients

6   cloves chopped garlic
2   (8-ounce) cans pineapple, save the juice
1   diced onion
1/2 cup Dijon mustard
1 lb cooked meatballs
4 cups ketchup
1/4 cup water
2 tablespoons Worcestershire sauce
1 cup of sugar
1/4 cup white Vinegar
2 TBSP Black pepper
3 tablespoons pineapple juice

Directions

Throw everything  except for the meatballs in a slow-cooker, mix well  then add the meatballs and cook on High for 4 hours or Low for 8 hours.

Crockpot Meatballs and Rice

My family likes the meatballs served on a bed of rice. You could do noodles or just meatballs with sides and it is just as good.
