Simple. Refreshing. Delicious.

That is what a summer chicken salad should be. This one does not disappoint.

Rosemary Chicken Salad

3 celery ribs

3 cups cubed, chooked chicken

1/2 cup mayonnaise

1/2 cup sour cream

1 TBSP finely chopped fresh rosemary

Thinly slice the celery and mix together with the chicken. Blend together the mayonnaise, sour cream and rosemary mixing very well. Pour over the chicken and celery stirring thouroughly to mix well. Serve.

It is that simple. And you can change it up as you want. Add some onions. Add some grapes. Add some almonds. Enjoy!

I had a Flat Iron Steak that I had been debating over and that debate morphed into one of the best salads I have ever had.

Marinade for steak:

3/4 cup soy sauce

1/2 cup lemon juice

1/2 cup olive oil

1/3 cup worcestershire sauce

1/4 cup mustard

1 TBSP minced garlic

1/2 tsp course salt

1/2 tsp ground black pepper

1/2 tsp fresh minced rosemary

Whisk all the ingredients together, reserve about 3/4 cup of the marinade, put the rest in a large resealable bag along with the steak and let it marinade 3-4 hours or overnight  (I usually let mine marinade over night and most of the next day). Once it is done soaking you can either grill it or broil it. This time, I broiled mine. I just turn the broiler in the oven on high, place the flat iron on a broiler pan and put it as close to the top of the oven as I can. Broil for about 7 minutes on each side. It really is that easy!! And delicious!!

For your salad, just throw together whatever you like. I like a salad loaded with lots of different lettuces, cucumbers, tomatoes, dried cranberries, bell pepper, onion, olives, celery, zucchini, etc. If I have it, I will toss it in.

I then sliced my steak and placed it on top. You can heat and use the reserved marinade to either pour over your steak as it rests or do like I did and use it as a dressing. Mmmm Mmmm Good!

One of my all time favorite dishes is spaghetti salad. It is easy, takes very little cooking, is quick and delicious.

Spaghetti Salad

There are no exact measurements, just estimates. But that is the beauty of this dish, you don’t have to get it exact for it to be perfect.

1 pkg thin spaghetti noodles, cooked

2-4 tomatoes (depends on how many you want in the dish)

1 jar/can black olives, diced into fine pieces

1/2-1 onion, diced into fine pieces (depends on how many you want in the dish)

1/2 jar Italian salad dressing (depends on how much you want in the dish)

Mix all ingredients in a large bowl, add salt and pepper to taste. That is it. It can be served once done or it can be refrigerated to serve later.
