Summer is just about over. We have plans to go to Hiawassee this weekend for some great food, family, friends, pickin and grinnin. It is the last big hooha of the year up there and due to age and health issues of my uncle it may just be the last one ever.

I have to decide what dish I am going to take and while I was browsing around I thought perhaps you might need to make the same kind of decision for a hooha that you are going to attend this weekend. So, I though I would bring to you a list of my 5 favorite summer dishes, since this is the last blowout of the summer and all.

1.) Spaghetti Salad

This dish is super easy to make, feeds a lot of people and is delicious. It also has a “light feel” to it and can be served warm or cold. That makes it the perfect dish to carry to any hooha you attend. Also, it only has 5 ingredients so it is economical to boot.

2.) Summer Fruit Salad

Another favorite in our house and to take on the road. Again, 5 ingredients, easy to make but it has to be kept cold. Light, refreshing and ohhh so good.

3.) Vidalia Onion Pie

It is getting harder and harder to find Vidalia’s. They are only here for a short time so we have to take advantage while we can. If you can still get your hands on a few, grab them and make this pie! I promise, you will groan at the goodness.

4.) Marinated Vegetables

This was one of my Granny’s favorites. You could always count on her having a bowl full in her refrigerator when you went to visit in the summer. It just evokes fond memories of sitting on the front porch snacking away…that it’s good doesn’t hurt either.

5.) Kool-Aid Pie

What can I say? Great dessert. Easy to make. 4 ingredients. And you can make it any flavor that you want.

All of these recipes are from the earlier days of The Post-It Place so none of them have photos. I need to go back and rectify that for ya’ll one of these days. I can promise that they won’t disappoint though. So, get out from behind the computer screen, quit worrying about Forex trading software and enjoy the last remaining days of summer with some family, friends and some good food!

HouseAutry Gift Basket

I recently was introduced to a fabulous company that makes all kinds of breaders, corn meals, and biscuit mix. The funny thing about it is that I have been eating House-Autry Mills products for years and had no clue. A couple of local restaurants use their products and my Mom informed me that they were the only brand of corn meal my Dad would ever use. No wonder I love their stuff so much!

Seriously though, their products are great. I have used several in the last few weeks and have been so pleased. Their HushPuppy Mix with Onion is superb and makes the best tasting hushpuppies in the land. I also made fried chicken using their Chicken Breader and everyone ranted and raved over it. But, for this post, I made a recipe off of their website. One of my sisters has a garden and brought me a bushel of fresh squash and it was just screamin at me to make a squash casserole…so that is what I did using this recipe from the House-Autry Site:

Ingredients
2 1/2 pounds squash – cut into rounds
1 pound sweet onions – diced
1 tsp poultry seasoning
3 tsp salt
1 tsp pepper
2 large eggs – well beaten
3/4 cup sour cream
3/4 cup cheese – shredded
Directions:

Preheat oven to 350°F. Grease a 2-quart casserole dish. In a large skillet, combine squash and onions. Add poultry seasoning and 2 tsp salt. Cook on medium high heat, stirring occasionally until water is rendered and squash is slightly tender; drain well. In a separate bowl, combine House-Autry Hushpuppy with Onion Mix, beaten eggs, sour cream, pepper and remaining salt; mix thoroughly. Gently fold in squash mixture and pour into prepared dish. Spread cheese evenly over top. Bake for 40-45 minutes, or until golden brown on top.

Bake and enjoy some good eatin!

One of our favorite outings during the summer months is to the lake. We have 2 locally, one is Carters Lake and one is atop Fort Mountain. Both have a beach area that attracts locals, both have great picnic areas. And both are tons of fun. Fort Mountain is a state park, Carters Lake is owned by the US Army Corps of Engineers.

Fort Mountain being a State Park offers free admission on Wednesdays making it a super affordable fun day! I am not sure about all State Parks, but I do know that even if they do not offer a free admission day they are still super affordable charging a typical fee of about $4 to park no matter how many people are in your car. And with a picnic lunch, you have a very affordable mini-vacation that isn’t far from home but provides hours of fun.  I know this state park also offer hiking trails, camping spots and many other great opportunities to spend some quality time with your family, I am sure yours does too…it just takes a little checking into.

Carters Lake is a much larger lake and offers even more opportunities for a great family day (and it is even closer to me, making it our first choice). They have a beach, a marina, some really great picnic areas, hiking and bike riding trails, prime fishing spots, many boat ramps, a visitors center and a really great playground area on top of the dam. You can even rent pavilions for parties and family get-togethers. Ok, so yes, the real reason that we prefer Carter’s is because we can ski and tube..and I get to see some of my best friends since that is where they always go to camp. And, it also is a very affordable way to spend a summer day at $4 per car.

Just make sure that you pack some sunscreen and protection for your lips as well. We always carry along Softlips. The wind and sun can be so harsh and I would much rather prevent than have to repair so I make everyone lather up with the sunscreen and paint on some Softlips because it has SPF!

But I hope that you will check out the local parks in your area. I am sure that you will find tons of things to do as a family to provide both a Wonderful Summer Wednesday and some affordable fun for all!

I hosted an Oscar Mayer Turkey Bacon party recently…and we had such a good time.

Thanks to Oscar Mayer we had napkins, a grocery list that has a magnetic back, recipe cards and a coupon for a free pack of turkey bacon for everyone in attendance.

Our special guest was Oscar. He hung out on the table all day and really enjoyed dancing and singing for everyone.

Oscar Mayer also provided the sparkly centerpiece, a serving tray, tongs and a spatula.

Other than the Oscar Mayer recipes I provided a few of my own.

This Quiche was made from Oscar Mayer Turkey Bacon, Spinach, low fat cheese, and Egg Beaters.

Super easy to make, tasted fabulous…I almost got it WAY too done.

I also cut up chunks of deer tenderloin. I marinated it overnight then wrapped each piece in Oscar Mayer Turkey Bacon and cooked it.

Ohhh, it was so good!

We call them Hoo-Dats. Not sure why, that is just what we have always called them.

We had a house full of friends and family enjoying one anothers company and having food on the table.

All the guest received some great goodies from Oscar Mayer and learned just how great tasting and versatile Oscar Mayer Turkey Bacon can be.
