fuzzy navel milkshake ingredients

1 cup peaches (can use fresh or frozen)

1 cup orange juice

2 cups vanilla ice cream

Mix all ingredients in a blender until smooth.

Bacon and Cheese Waffles

Breakfast is my favorite meal of the day. I just LOVE it! And of course when you mention bacon, you have me right where you want me! Bacon, Bacon, Bacon. And then add in waffles…OhMyStinkinHeck! I am THERE! Seriously though, these Bacon and Cheese Waffles are delicious any day of the week, but with Mother’s Day here upon us, these are perfect for the kids to serve to Mom in bed…and she is going to be VERY impressed!

Gather up the ingredients. You will need flour, milk, butter, cheese, bacon and eggs.

We just need to take a minute to mix up some maple butter…

and slather it on top…and we are ready to eat!!

Bacon and Cheese Waffles

2 1/3 cups self-rising flour

1 3/4 cups milk

3 eggs

1/4 cup butter, softened

8 slices of bacon, cooked, crumbled

1 cup shredded sharp cheddar cheese

Preheat waffle iron. In a large bowl mix the milk, eggs, butter together, then add in flour, mixing well. Once mixed, stir in the bacon pieces and cheese. Pour about 1 cup of the batter onto the center of the waffle iron and bake for approx. 5-8 minutes. Serve warm with maple butter (recipe below)

Maple Butter

1/2 cup butter, softened

1/4 cup maple syrup

Beat the butter and maple syrup together until well blended.

 

Onion and Herb Roasted Potatoes

We love potatoes. Of Any Kind. But these, ohhhh, these potatoes…they are a big favorite in this house!

This is one of those simple, easy to make recipes that requires few ingredients, is economical yet packs a punch of flavor that you won’t soon forget! Another great thing about this recipe is that it is easy to double if you feed a crowd like I do.

Onion and Herb Roasted potatoes ingredients

All you need are some potatoes, dry onion soup mix, Italian seasoning and olive oil.

Wash and peel the potatoes, then cut into chunks.

Add the olive oil, dry onion soup mix and mix well.

Then I top with the Italian seasoning and mix it in…you can do this with the other ingredients but I never measure the amount of Italian seasonings that I use, I just add until it looks right to me. If you are one of those folks that needs exact measurements though, I would guess I use about 1-2 Tablespoons.

Bake on 400 degrees for 1 hour.

Onion and Herb Roasted Potatoes

2 pounds of potatoes

1 package dry onion soup mix

1/3 cup olive oil

Italian Seasoning

Wash and peel the potatoes and cut into chunks. Place the potatoes in a 9 X 13 baking dish, top with olive oil, dry onion soup mix and Italian seasoning. Mix well, Bake on 400 degrees for 45 minutes to 1 hour. Just check the potatoes to see if they are fork tender to make sure they are done.

I always double this recipe, so if you need to feed a larger crowd it is easy to double and the cooking time only increases by about 15 minutes.

 

Orange Maple Grilled Alaskan Salmon Fillets

I am so glad it is finally warm enough to fire up the grill. I have missed it so much. We used to grill year round, since we live in the South, but the last couple of years it has been really cold here and we just haven’t used the grill as much. But, finally some warm weather hit and  it was time to remove the cover, fill the tank and fire it up!!

The great folks at Schwan’s sent us some Salmon to try out, they sure do have perfect timing!

And it sure did hit the spot!

If you have never tried Schwan’s I think the time to do so is now! They have such a great variety. AND they deliver right to your door. Even if you aren’t sure how to fix something, they have some great recipes! They have a Grilled Salmon & Portabella with Vinaigrette   recipe that looks wonderful but when I went to the store to get the portabella’s they were none to be found so I went to work…

…and here is what I came up with. Let’s get to grillin’! First off gather up your ingredients. You are going to need some Salmon, rice vinegar, orange juice, maple syrup, salt and white pepper.

Mix the rice vinegar, maple syrup and orange juice together.

Place the Schwan’s Salmon in a resealable plastic bag and pour the marinade over it. Refrigerate for at least an hour.

Save the marinade.

Grill over medium heat for approx. 6 minutes per side. This is going to vary, depending on the size and thickness of your fillets. You know it is done when it gets “flaky”. We used some Reynolds grill sheets on one side of the grill and used a special grate on the other. Both worked just fine. Just make sure to spray with some cooking oil spray to help keep the salmon from sticking and making it easier to turn. Also, when you turn it, baste it with some of the marinade. Mmmm!

Sprinkle with a little salt and white pepper and you are ready to eat!

Orange Maple Grilled Alaskan Salmon Fillets

4 Schwans salmon fillets

1/2 cup rice wine vinegar

6 tablespoons maple syrup

4 tablespoons orange juice

Cooking spray

salt

ground white pepper

 

Combine the Orange Juice, Maple Syrup and Rice Vinegar in a large resealable plastic bag; add fish. Seal and marinate in refrigerator 1-3 hours. Preheat the grill  to medium heat. Remove fish from bag, save the marinade. Place fish on grill rack or pan coated with cooking spray; grill 5-6 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness, basting occasionally with marinade. Remove fish from grill; sprinkle with salt and pepper and ENJOY!
