Fried Chicken

There are so many different ways to cook fried chicken and they are all correct. It just depends on what region you live in and how your Momma and Grandmomma done it as to which you probably use in your home.  Growing up I didn’t care to much about cooking. My Daddy was always in the kitchen cooking up something and while I remember it being a passion of his I didn’t hang out with him in there too much. Now, I regret that and I wish I had made a pest out of myself and made him show me what he was doing. So many of his recipes went to the grave with him, lost forever. So, when I started looking for a fried chicken recipe I went to my Great Aunt Ruth. With both of my Grandmomma’s and my Dad gone I had to look somewhere. My Momma didn’t like to cook a lot when we were young and since my Daddy did it was usually his job.  Ya’ll have heard me talk about my Aunt Ruth many times and she is one of the best cooks I know…and I have ALWAYS loved her fried chicken.

Ruth told me that the trick to any good fried chicken is to marinate it in a mix of buttermilk and egg for at least several hours, preferably overnight.

After your chicken has marinated you want to gather your other ingredients.

 Flour, Salt and Pepper.It doesn’t really matter if you use self-rising flour or all-purpose flour. Just flour.

I know you see the ranch dressing up there, I am getting to it…

…you see, we have experimented with adding many flavors to the mix and the one that is requested the most is Ranch Dressing mix. We also like adding some cayenne pepper or chili powder and cajun seasoning for a spicy fried chicken. Or add a little powdered sugar for a taste more in line with Chick-Fil-A chicken. We also like to add dry Italian dressing. Or just Italian seasoning. You can also do lemon pepper seasoning. See where this is going? The possibilities are limitless.

Mix all your dry ingredients together and dredge your chicken in it.

Ruth also told me to always fry my chicken in Peanut Oil.

So that is what I use. Heat your oil in a heavy pan on medium-high, then drop your chicken in, just be careful of oil splatters.

Remove it from the oil and place on a paper towel to drain when it is golden brown.

Chicken  (I use chicken tenders)

Buttermilk

1 egg

Flour

Salt and Pepper to taste

Seasonings of your choice (Ranch was used in this batch)

Directions:

Whip one egg and add to buttermilk. You will use enough buttermilk to cover your chicken and marinate at least 4 hours, preferably over-night. Heat oil in a heavy pot on medium-high heat. After chicken has marinated mix flour, salt, pepper and seasonings of choice together. Dredge chicken in the flour mix coating well. Place chicken, one at a time, in oil. Fry until golden brown.

If your oil is too hot your chicken will cook too quickly on the outside and be raw on the inside so make sure not to use too high of heat.

London Broil Plated

When I made this I had no idea that it would become my favorite dish of all time. Sometimes things turn out like you hope and sometimes they can be a huge flop. This could have gone either way, but I had my hopes up.

The minute we sat down for dinner and everyone tasted it, I KNEW it was a huge hit. There wasn’t a bite left. The ohh, ahhs, moans and groans said it all.

Now, it is a family favorite and one made on a very regular basis. It is easy and when you find the ingredients on sale makes for a very budget friendly meal. I found coupons for the Grill Mates that doubled and made it free, the London Broil was on clearance and I also found the gravy mix and ranch mix on sale. Total for this dish was approximately $6!

You will need a slow cooker, a London Broil, 1 package of McCormick Grill Mates Garlic Herb and Wine mix, a package of brown gravy mix, a package of Ranch dressing mix and 1 1/2 cups of water.

Stir all 3 packages of mixes into 1 and 1/2 cups of water.

Place the London Broil in a slow cooker and pour the gravy mix over the top.

Cook on low for 6-8 hours depending on how big your cut of meat is.

Remove from slow cooker and slice. It should just fall apart on you, and that is ok. When you plate it spoon some gravy over the top for the best results.

I can’t ever have this without mashed potatoes because the gravy from the meat is sooo stinking good on the mashed potatoes that it isn’t even funny. I also like to have a roll handy to sop up any gravy left on the plate after everything else has been eaten. The other side you see on the plate here is fried cabbage. Yummy to the whole meal!!

Sweet Roll Sliders, Loaded Potato Casserole and Roasted Asparagus
OhMyStinkinHeck! I can’t seem to get enough of these potatoes, it’s like a really bad habit that you want to break but when no one is looking you go back for more. And more. And more. And more. It has gotten to where when people are coming for dinner they ask “are you making those really good potatoes?” Ohhh, I most certainly can! (shhh, don’t tell, because in my book any excuse to make them is a GREAT excuse!)
They are easy to make and you will be so glad you did. Life just wouldn’t be complete without having these at least once, or a thousand times!

Mix together the cheese, bacon, sour cream and ranch. I just mix mine all in the pan I am going to cook it in…and I use a lot of aluminum pans. I have a friend that works for the company that makes them and can get a really good deal which makes for easy clean up and they can be recycled!

It’s going to look like a gloppy mess, but I assure you, they are divine!

Add in the hashbrowns and mix well.

Bake on 400 degrees for about an hour.
YUMMY!

Ingredients:
2 (16oz) containers sour cream
2 cups cheddar cheese, shredded
2 (3oz) bags real bacon bits
2 packages Ranch Dip mix
1 large (28 – 30oz) bag frozen hash brown potatoes – shredded kind
Directions:
Combine first 4 ingredients, then mix in hash browns.  Spread into a 9×13 pan.  Bake at 400 for about 60 minutes. If you want to make several, these freeze great, then just take out of the freezer and bake when you are ready.
