There are just some things that you just can’t get when you live out in the middle of nowhere. Thai food is one of them. I had never even tasted Thai food before Thai Kitchen came into my life and now it is forever altered. I am in love! We have made several dishes now and while I at first was intimidated by the thought of making Thai food at home, it turns out to be super easy. You will need some basic ingredients:

A really easy one that has become a beloved dish around here is Red Curry Chicken:

One dish that we plan to make soon is Pad Thai. Everyone that I have talked to about Thai food over the last few days says it is a must try. The great thing about Thai Kitchen is that you can find the ingredients in any grocery store…trust me, if I can find them here, I know you can and they have a fabulous website that has all sorts of recipes that are easy enough for any novice to make.

One thing I have learned in my Thai cooking experiences of late is that the differences in red and green curry (the only two available in my area) are the types of chili’s used. Red tends to be spicier. Now, I am not a big spicy foods eater and I can still handle the red curry paste…the trick is just to alter the amounts called for in recipes. The first recipe I made I was scared and I didn’t use the amount of red curry paste called for and regretted it. Now, I make it with the full amount required and am very happy with the results. Bric and Erin would love for me to double it and make it spicier. So, it is just a matter of personal taste.
