Sweetheart Whoopie Pie

With Valentine’s Day just around the corner I have decadent deserts on the brain. I wanted to make something special for the family and incorporate some of their favorites. So, here is a Sweetheart Whoopie Pie for MY sweethearts!

I had a pretty good idea of what I wanted to create but there were a few things I needed to pick up. So as I was strolling the aisles of ALDI (I LOVE, love, love their prices on produce. They have great prices on lot of things, but no one can beat their produce prices), picking up the fresh berries I needed I happened to spot this cute heart shaped pan and knew it would make my dish perfect!

Ingredients:
1 box Duncan Hines Red Velvet Cake
6 T butter
2 eggs
1 C powdered sugar
1 tsp cornstarch
Preheat the oven to 375°. Melt the butter and set aside to cool. In a large bowl, mix together the cooled butter, cake mix and eggs.

Drop one large spoonful into each muffin tin or onto a cookie sheet.

Bake for 9-10 minutes. Don’t overbake!!

While they are cooling, let’s make some filling. Now, I am going to give you the recipe for a regular batch of filling, but me, I double it. Yep, I like to make fat Whoopie Pies, and I like to dip the extra berries in the filling, ok… I like to just eat the filling.

Filling ingredients:

1/4 cup soft butter

4 oz. cream cheese

7 oz. marshmallow creme

Mix the butter and cream cheese well. Then fold in the marshmallow creme and BAM, you are done.

Once you have the cookie done and cooled, the filling made all you have to do it put it all together. Then I simply topped with an assortment of fresh berries. You can use whatever your favorites are but since we like them all, I added a variety. And those left-over berries…yeah, go ahead, dip them in some filling and sit back and enjoy!!

Bi-Lo is one of my favorite places to shop. You can stack a manufacturers coupon and a competitor coupon for some really great deals. They double coupons up to .60¢ and when they have a Buy 1 Get 1 Free sale you get each item at half price, which means you can use 2 coupons!  Their ad does change on Wed, so make sure to swing by before then.

Kroger often has some fabulous sales. I really stock up during their Mega Events so make sure to keep a watch out for those. This week they have just a regular sale ad but some good deals can be found. They double coupons up to 50¢ but DO NOT accept competitor coupons.

CVS, along with the other drug store chains, can really have some great deals. Most folks think of them as one of the most expensive places to shop but when you watch the sales, pair it with coupons you can get stuff for next to nothing.

ALDI

I love to shop at ALDI, especially for their produce. ALDI does not accept any coupons. Make sure to remember to carry your own bags and a quarter (which you get back) to use a shopping cart.I also usually buy eggs and milk here, they have a good everyday price. Make sure to check out many of their other everyday prices if you have never been.

London Broil Plated

When I made this I had no idea that it would become my favorite dish of all time. Sometimes things turn out like you hope and sometimes they can be a huge flop. This could have gone either way, but I had my hopes up.

The minute we sat down for dinner and everyone tasted it, I KNEW it was a huge hit. There wasn’t a bite left. The ohh, ahhs, moans and groans said it all.

Now, it is a family favorite and one made on a very regular basis. It is easy and when you find the ingredients on sale makes for a very budget friendly meal. I found coupons for the Grill Mates that doubled and made it free, the London Broil was on clearance and I also found the gravy mix and ranch mix on sale. Total for this dish was approximately $6!

You will need a slow cooker, a London Broil, 1 package of McCormick Grill Mates Garlic Herb and Wine mix, a package of brown gravy mix, a package of Ranch dressing mix and 1 1/2 cups of water.

Stir all 3 packages of mixes into 1 and 1/2 cups of water.

Place the London Broil in a slow cooker and pour the gravy mix over the top.

Cook on low for 6-8 hours depending on how big your cut of meat is.

Remove from slow cooker and slice. It should just fall apart on you, and that is ok. When you plate it spoon some gravy over the top for the best results.

I can’t ever have this without mashed potatoes because the gravy from the meat is sooo stinking good on the mashed potatoes that it isn’t even funny. I also like to have a roll handy to sop up any gravy left on the plate after everything else has been eaten. The other side you see on the plate here is fried cabbage. Yummy to the whole meal!!

 I love one dish meals. I love that they cause less of a mess to clean, they are usually economical and they usually have that comfort food feel about them. This one is stick to your ribs hearty, great for a cold day and tastes great!

Shhh, don’t tell but I also love the fact that I can hide lots of vegetables in the dish.

It is also easy on the budget if you plan it right. Mueller’s typically has coupons for their noodles and when you can find them buy one get one free you can typically get them for free or next to free. I can sometimes also find Johnsonville coupons and paired with a good sale you can get a great deal ( I have about 10 packs in my freezer because we love it!). I got the ground beef marked down and a large bag of carrots we are working on for a very good price. If I had restaurant funding I could be content to cook all day and do so on a budget. Of course being around my house is like running a restaurant some days.

My recipe is more of a guideline, there is no perfect measurement that is going to make or break this dish. You can also change up the ingredients a little to suit the tastes of your family.

1 package Johnsonville Italian Sausage, 1 pound ground beef, 1 onion (I was out but had chopped green onions and used those), 1 bell pepper, carrots, artichokes, garlic, diced tomatoes, tomato sauce, tomato paste, Italian seasoning and noodles.  ( I forgot to get my spices, sauce and paste out for the picture)

 Chop all of the vegetables and place in dutch oven with the meats. Cook thoroughly.

I was lucky and found lean ground beef on sale so I did not have to drain the grease off of mine. If you have a lot of grease you will want to drain some of it off. Leave a little for flavor though.

Add in the diced tomatoes (do NOT drain), tomato sauce and tomato paste and Italian seasoning and garlic to taste. I would use 2 cans of each. I had some frozen diced tomatoes and tomato sauce that I used. If you want to make it even easier, just use a large jar of spaghetti sauce and a can of diced tomatoes.

This is the best part!!!

Just dump your noodles in the pot with every thing else.

Yep, you don’t have to boil them. They will cook in the sauce and taste better than you ever imagined!

Dutch Oven Pasta

Oh Goodness!

Just look at it, and wait till you smell it!

Allow it to simmer for about 30 minutes and the noodles are cooked through.

ONE DISH PASTA DELISH

1 package Johnsonville Italian Sausage

1 pound ground beef

1 onion

1 bell pepper

2 – 3 carrots

1 can of artichoke hearts

garlic, to taste

2 cans each – diced tomatoes, tomato sauce, tomato paste (do not drain the diced tomatoes…or you can use one large jar of spaghetti sauce)

Italian seasoning, to taste

noodles (any kind will work although I have never tried using long noodles)

DIRECTIONS:

Cook the meats and vegetables until browned. Add in the tomato products, garlic and spices. Mix well. Add in the uncooked noodles, mix well. Allow to simmer approx. 30 minutes.
