Raspberry Glazed Chicken Wings

These babies are OhMyStinkinHeck DELICIOUS!! Seriously, I know they sounds a little weird, but give them a try, you are going to be amazed. I made them for our Memorial Day get-together and they were the first things to disappear. I didn’t make nearly enough to go around and heard about it for days.

You only need chicken wings, raspberry jelly, apple cider vinegar, soy sauce and garlic salt.

Mix up the sauce and pour it on.

Bake and enjoy!

 

3 pounds chicken wings

1 cup Raspberry jam ( I use the seedless kind)

1/2 cup apple cider vinegar

1/2 cup soy sauce

2 teaspoons red pepper flakes

Mix the raspberry jam, vinegar, soy sauce and red pepper flakes together in a large bowl. Place the chicken wings in the sauce, coating each one well. Place each wing on a foil lined baking sheet. Bake at 350 degrees for 45 minutes to 1 hour.

Summer time is here! And we are feeling the heat.

Our air conditioning unit decided to bite the dust just as 90 degree temperatures hit our area and let me tell you, I am SPOILED to the air condition. I think it just happens to be the best thing ever.

bacon cajun baked beans

Baked beans are a must have for any gathering at my house. Not only are they great, they are economical when feeding a crowd. And we love a crowd. During the summer we do a lot of entertaining…and love every minute of it. So, you will see that to make this, I double everything…one batch just isn’t enough to feed this hungry crowd…and there is never a bite left.

Everyone loves this recipe. I am constantly asked to write it down for folks.

And today I am sharing it with all of you!!

Remember I always double it for my house, so the ingredients that I used shown in my picture are for a double batch, but the recipe below is for a single batch. Also, I grabbed the wrong kind of tomatoes for my picture, use diced tomatoes, not crushed.

Cook the bacon and onions.

Mix the baked beans and cajun seasoning in a baking dish.

Place the bacon and onions on top.

Mix the sugar and tomatoes together.

Then place on top and bake.

3 slices of bacon

1/2 cup minced onion

2 (15 ounce) cans baked beans

1 Tablespoon Cajun seasoning

1 (15 ounce) can diced tomatoes, drained

2 teaspoons sugar

Fry bacon and onion until bacon is crisp. Place baked beans in a 3 quart baking dish, stir in the Cajun seasoning, mixing well. Layer the bacon/onion mix on top of the beans. Mix together the diced tomatoes and sugar, then pour over the top. Bake at 400 degrees for 45 minutes.

This has been one of those weeks for me where it has seemed like a struggle to get anything I needed to get done accomplished. We did get a fence installed in the front yard thanks to a dear friend of ours and Chuka can go out and run to his little hearts content. A & T Fence did a fabulous job!!

We had a great Memorial Day filled with gratefulness and memories of those who have served and given their all to make it possible for us to live in freedom. We cooked some pretty darn good food, had lots of friend and family over and opened up the pool for the season.

As I was preparing for our Memorial Day meal I went to one of my favorite stores to gather up all the ingredients I needed and to take pictures for a post I am working on for said store. See, they sent me a gift card to use and 4 to give away (that will be coming soon so stay tuned). As I was wandering around, taking pictures, gathering ingredients I saw a little couple doing their shopping, carefully choosing what to put in the cart. He was carrying around his oxygen tank and after he and I danced in the aisle a time or two I decided to strike up a conversation. We talked about the weather, the great produce that the store had and how we loved the store because they are so affordable. He was telling me that it was the best place for them to shop because after paying bills and for all the medicine they had to have there just wasn’t much left to buy food. How sad is it that our elderly have to struggle so hard?

So, I reached in my bag, pulled out a gift card and told them to have a great day. You would have thought I handed them a million dollars. It wasn’t much but it meant the world to them…and sometimes that is all that matters folks, that some little token makes the difference to someone…it makes the world a little brighter in my book.

I also made a cake for a neighbor this week. She had a birthday and just needed some cake. We all need to have our cake and eat it to at times. I am a big believer in the fact that no matter how big or how small ANY act of kindness is, it does make a difference to the recipient. I think that as humans, we all just need to know that someone/anyone cares about us. SO take a moment today and let someone know that you care!
