These have been a long time favorite around here. This is also one of the things that I fixed for Bric when he visited me here in GA, way before he moved here. Way before we got married. And it is still one of his favorites to this day. They are super easy which makes them great for a party, a tailgate, or simply a weeknight meal for the family. When we have them as a meal I will add some Chicken Noodle Soup to the side and sometimes it is even the canned variety making supper ready in 15 minutes.

All you need is a package of mini rolls that come in an aluminum tray, some spicy mustard and a can of corned beef.

Take the rolls out of the tray, slice in half, then place the bottom half back into the tray.

Spread spicy mustard over the top half of the rolls and slice the corned beef and spread over the bottom half.

Make sure to cover the whole bottom half with the corned beef. If your slices are too thick, just “mash” it out on a cutting board then place on the bread, it your slices are too thin, just add more on top. There really isn’t a right or wrong way.

Place the two halves together in the aluminum tray.

Bake on 375 degrees for about 10-15 minutes.

Spicy Mustard

1 can corned beef

Slice the rolls in half, spread mustard over top half, spread corned beef over bottom half. Place the two halves together and place back into the aluminum tray that the rolls came in. Bake on 375 degrees for 10 to 15 minutes.

Corned beef, sauerkraut, cheese and mustard.

Reuben Sandwich

1 lb shaved corned beef (I get mine in the deli of our local grocer)

Sliced cheese of choice, I usually get Swiss but we also like Havarti and Provolone.

Spicy Mustard

Heat up the sauerkraut in a frying pan and heat thoroughly.  Take some of the corned beef and heat it in a separate frying pan until the edges start to brown. Toast your bread in a toaster.

Lay the toasted bread out and slather some spicy mustard on one side, place the cheese on the other slice of toast. Top with the corned beef and some sauerkraut.

Put it all together and you are done.

Mustard holds a special place in my heart.

It is my FAVORITE condiment.

Shhh, don’t tell but I hate mayonnaise so when I make a sandwich, mine always has mustard on it. And it has to be French’s. Ohhhh my tangy friend how I love thee.

It is also an integral part of my all time favorite breakfast:

My friend Christy and I were on a road trip when she first discovered just how delicious it is. She thought I was insane when I told her to ask for mustard the first morning I ordered a sausage biscuit. Then she tried it and got hooked for life.

Honey Mustard, great on chicken nuggets. Spicy brown mustard, perfect with corned beef. Dijon Mustard, fabulous on baked chicken.

 These never last long in my house, they are so much better than any sloppy joe you can make with canned sauce and they are so easy!!

So, what is YOUR favorite way to use mustard?

“French’s supplied me with samples to help facilitate this post. But I really have always used French’s mustard because it truly is my favorite. And even though you may think I have lost my mind by putting mustard on a sausage biscuit, you should try it. I have been eating mine that way since I was a very young child. Cause that is the way my granddaddy always fixed them for me. I never knew it wasn’t normal until I became an adult and people would look at me like I had lost my mind.”

 

Crockpot Meatballs

What an ugly picture. I know my picture is horrible but it is what it is. I tried several times but just couldn’t get one that was any better…until I plated them. Ok, maybe that one just looks better because I was ready to eat! Wouldn’t it be great if we could use some of that scanner software to transport food back and forth? Because let me tell you, these are fabulous, regardless of how ugly my picture is! This is Tate’s most favorite dish. He asks for it often and can never seem to get enough of them. Don’t get me wrong, we all love them, they are just Tate’s most favorite dish ever.

They are easy to make too. Don’t let the ingredient list fool you, they aren’t complicated to make at all! I always double or triple the recipe because one batch is never enough. And when one batch isn’t enough, you know it’s a good recipe. Yummm, let’s go eat!

Ingredients

6   cloves chopped garlic
2   (8-ounce) cans pineapple, save the juice
1   diced onion
1/2 cup Dijon mustard
1 lb cooked meatballs
4 cups ketchup
1/4 cup water
2 tablespoons Worcestershire sauce
1 cup of sugar
1/4 cup white Vinegar
2 TBSP Black pepper
3 tablespoons pineapple juice

Directions

Throw everything  except for the meatballs in a slow-cooker, mix well  then add the meatballs and cook on High for 4 hours or Low for 8 hours.

Crockpot Meatballs and Rice

My family likes the meatballs served on a bed of rice. You could do noodles or just meatballs with sides and it is just as good.
