McCormick Grill Mates

I absolutely LOVE, love, love McCormick Grill Mates seasonings. I think I have almost every variety in my cabinet and I use them for so many different things…not just to season meats for the grill. Although they are fabulous for that and if you are having a cookout this 4th of July (or any other time for that matter) you should really consider trying out some of their new ones. I tried both the Grill Mates® Slow & Low Smokin’ Texas BBQ Rub and the Grill Mates® Slow & Low Memphis Pit BBQ Rub rubbed on ribs the other day. I don’t think I can decide which I like better so my suggestion is to grab a pack of both!! Having Burgers? No problem!! The Grill Mates® Steakhouse Onion Burger Seasoning is FABULOUS!!! They have SOOOO many different varieties that there is something for everyone and every meat that you can think of. The other day our grill messed up though and we wanted some flavor…as I was browsing the fridge and the cabinet to see what I could throw together I thought Hmmm, what if I mixed up some Grill Mates and some flour, and breaded some pork chops. Grand Slam!! We gobbled those babies up and wished I had made more. So, even if you don’t have a grill, don’t let that limit your imagination on what you can do with McCormicks Grill Mates.

Spiced Brandy and Herb Grill Mates

Choose your favorite flavor packet. I am using Grill Mates Spiced Brandy and Herb marinade. Even though it says it is a marinade it can be used as so much more. We use their marinades as seasonings, rubs and anything else we can think of.

Grill Mates and flour

Mix the packet with some flour (it doesn’t matter if you use all-purpose or self-rising, both work)

Heat about 1/4 cup oil in a skillet. Dredge the pork chops in the flour mixture and fry on med-high heat for about 4 minutes per side.

They will be golden brown and taste like perfection!!

I hope you get the chance to try any or all of these. They are all so good and will make your family sing your praises. Or grab some Grill Mates, a slab of meat and fire up the grill. You really can’t go wrong either way.

I hope you each have a fun and safe 4th of July Celebration. We will be celebrating this great day of freedom by eating some great food, fellow-shipping with family and friends and floating around the pool. What’s on the menu? I am not completely sure yet other than some pulled pork BBQ made with Grill Mates® Slow & Low Memphis Pit BBQ Rub and some Italian Cheesy Potatoes. The rest is up to the guests since everyone has been asked to bring a side-dish. I will have to update you after I find out myself.

OhMyStinkingHeck, we love these potatoes. Ok, I really just love potatoes, but these are over-the-top fabulous! AND, they fit right in with my budget cooking. And they are easy.

What do you need?

Yukon Gold Potatoes

Package of Grill Mates Zesty Herb Marinade mix

Green Onions, chopped

sliced potatoes

Slice your potatoes and place in a greased cast iron skillet. If you want to use something other than a cast iron skillet just drizzle with olive oil. I make these both ways but prefer the cast iron skillet method.

Sprinkle the grill Mates seasoning over the potatoes and give them a stir.

Sprinkle chopped green onions over the top and bake on 400 degrees for an hour.

They really are that simple!

It seems like the beginning of each year our budget gets tighter and tighter. So, I start looking for ways to cut back even more and that means budget meats. Now, I have found that just because you are using cheaper cuts of meats doesn’t mean you have to have a boring meal. This is a recent meal that we had and everyone raved over it. Bric, who says he doesn’t like the drumsticks cleaned his plate. He even went back for seconds. Tate says he doesn’t like brussel sprouts but he cleaned his plate and went back for seconds as well.

This meal was inspired by what I found on sale at the grocery store. I bought a pack of 10 drumsticks for $1.99. A package of diced rutabagas for.99, 8 pound bag of carrots for $1.99, bag of brussel sprouts for .99, and 2 sweet potatoes for .78. That means that this meal cost less than $7, fed my family of 4 for supper and there was enough left-overs for lunch and enough carrots left to last us AWHILE for other meals.

Drumsticks:

1/2 cup Balsamic Vinegar

1/2 cup Honey

1/4 cup soy sauce

2 tsp minced garlic

1/2 tsp salt

1 tsp black pepper

8-10 drumsticks

Mix the first 6 ingredients. Place the drumsticks in a baking dish and pour the marinade over them. Marinate in the refrigerator for about an hour. After an hour place the drumsticks on a foil lined pan, I like to use with with a lip or a baking dish. Reserve the marinade. Bake on 425 degrees for 1 hour. When the drumsticks are close to being done boil the marinade to kill any bacteria, then baste the drumsticks several times near the end of cooking.

 

Roasted Vegetables:

You can use about any vegetables that you would like. I used rutabagas, carrots, sweet potatoes and brussel sprouts. Just cut into chunks and place in a baking dish. There is no right or wrong amount.

Then mix together 1/2 cup brown sugar, 1/4 cup olive oil, 1/4 cup balsamic vinegar, 2 tsp salt, 2 tsp black pepper. Pour over the vegetables and stir to coat. Bake on 425 degrees for 1 hour.

A delicious meal that is low cost, goes a long way and is easy to make! You just can’t get much better than that.

I had a Flat Iron Steak that I had been debating over and that debate morphed into one of the best salads I have ever had.

Marinade for steak:

3/4 cup soy sauce

1/2 cup lemon juice

1/2 cup olive oil

1/3 cup worcestershire sauce

1/4 cup mustard

1 TBSP minced garlic

1/2 tsp course salt

1/2 tsp ground black pepper

1/2 tsp fresh minced rosemary

Whisk all the ingredients together, reserve about 3/4 cup of the marinade, put the rest in a large resealable bag along with the steak and let it marinade 3-4 hours or overnight  (I usually let mine marinade over night and most of the next day). Once it is done soaking you can either grill it or broil it. This time, I broiled mine. I just turn the broiler in the oven on high, place the flat iron on a broiler pan and put it as close to the top of the oven as I can. Broil for about 7 minutes on each side. It really is that easy!! And delicious!!

For your salad, just throw together whatever you like. I like a salad loaded with lots of different lettuces, cucumbers, tomatoes, dried cranberries, bell pepper, onion, olives, celery, zucchini, etc. If I have it, I will toss it in.

I then sliced my steak and placed it on top. You can heat and use the reserved marinade to either pour over your steak as it rests or do like I did and use it as a dressing. Mmmm Mmmm Good!
