Pay It Forward Friday graphic

This week was a little special for me. I have friends from all over the world, some I have known for years, some I have never actually met and some I may have only known for a short time but they quickly became like family and are there to stay. I met this family about 4 or 5 years ago. The instant we met, we became quick friends, then as time passed we became family. I love the whole family to pieces and can’t imagine life without them and wonder what took us so long to find one another. A few years ago when I got the call…sobbing on the other end…and the words “We lost everything”… I immediately got to work gathering, seeing what I could do and making the 3 hour trek to see how I could help. They would do the same for me in a heartbeat. See, a tornado had leveled their home and threw a tree right through their truck.

But this goes 2 ways, don’t think it is just me doing for them. See this website right here, yeah, the one you are reading? Well, they are the ones who help keep it running. They handle all that technical stuff that I have no idea what it even means. Anytime there is an issue they work tirelessly to resolve it…and give me reassurances that it will all be ok…because I tend to freak out a little bit when something goes wrong.

Recently, my friend Beth called me in a panic and needed to borrow a little money, I sent her the money never thinking anything about it. About a week goes by and a different friend calls me and asks can I get Beth to do something for her and she would pay her a set amount…it was the same amount that Beth had borrowed. So when I tried to pay Beth for the work she had done she said I owe it to you, just keep it. I stuck the money in my pocket and thought no more about it. Well,  Beth and I were on the phone recently, talking about the upcoming warm weather, when we could all get together, what was going on in our lives, etc. It was mentioned that the tires on their vehicle were bald and that they had to stick close to home. Living on a very fixed income I knew it would be some time before they could afford new tires…and seeing as how another dear friend of mine owns a tire store, I got to work. I called Mark and he started hunting for a set of decent used tires that would fit what they needed and that I could afford. Tires were found and when I go to pick them up I pulled that money out that we had been passing back and forth to help pay for the tires. Mark told me to just keep it, that I would need to use it for gas money to deliver the tires. So, I set off to Alabama to deliver them…on my way I had to make a stop to see another friend and have lunch. I pulled out that same money…the very same money we have all been passing back and forth…to pay for mine and my daughters lunch. My friend looks at me and says “this one is on me, put your money away”. Well, I put the money back in my pocket, have a wonderful lunch with my dear friend and her mother, finish my journey to Beth’s house and deliver the tires and some plants. We sat and chatted for awhile and Erin and I headed home.

The story doesn’t end there. You see, there is ALWAYS more to a story.

About the time that Erin and I get to the Tennessee line it becomes a TORRENTIAL downpour and the lightening is SCARY! I am not normally scared of storms but this was a bad one. We drove in it for over an hour, creeping along wondering if it was ever going to let up. By the time I got to Dalton and exited the Interstate my knuckles were white from gripping the steering wheel so hard…and I was starving. We had made it to the other side of the storm and were debating on where to eat. I told Erin that after all that I was just wore slap out  and just wanted to get home…so we decided to hit the Chick-Fil-A drive through. I placed our order and pulled around, waiting in line to get our food. As we pulled up to the window and I got out that SAME money to pay the young man and he informs me that the person that was in line in front of us had paid for our order!! How awesome is that?!

I am still toting around that money and one day I am going to use it for something good. Something really good, when the time is right I will know it and THAT money will surface again.

Pay It Forward Friday graphic

This week for our Pay It Forward Friday we had some fun! We took a little note, a couple of lottery tickets and a penny and placed them in plastic baggies and then we went around town and chose cars at random to leave the little packages on. We had no idea who the recipient would be, we had no idea if they would win anything. But we sure hope it brightened some folks day cause we sure had fun doing it! I imagine that we might have been seen on the Hospital security cameras wandering around the parking lot, trying to decide on a lucky recipient there. And the folks at the grocery store probably thought we were insane running from one side to the other…in the rain. But we had fun and I hope they all won at least a little something.

I am looking forward to Pay It Forward Fridays more than ever, we are having such a great time coming up with what we are going to do next. The kids are really enjoying being involved and I can only hope that they will continue this tradition for years to come.

I like doing things for other folks. While we may have financial struggles from time to time and there have been days where we wondered where the next bill money would come from, we have never gone hungry and for the most part we have been blessed with many “wants” and done without very few “needs”.

That isn’t the case for many though, and I always hate to see others struggle. I get that some people bring struggles on themselves, goodness knows I have brought on my own fair share with bad decisions throughout my life but sometimes things just happen, things that can’t be helped and that we have no control over. It is during those times, times of hardship and heartache that pull my heart strings the most. And sometimes I wish I could do WAY more to help, but it can be the smallest of things that bring a light to an otherwise dark place.

I hope that through my Pay It Forward Fridays I can bring a little light and hope to some people that are around me, whether I know them personally or not and I hope that I can inspire some of you to do a little thing here or there to help someone around you. Paying it Forward doesn’t have to cost a lot, or send you way out of your way. It can be as simple as passing on a smile to someone. You never know what that persons that you deem as grumpy is going through, perhaps they just lost a loved one, or their job. Maybe that person that is holding up the line at the grocery store is trying to decide the best way to feed their family on the last couple of dollars that they have. That “crazy coupon lady” that you hate to see at the checkout…perhaps that is the only way she can afford to feed her family.

This week my Pay It Forward Friday mission involves a local family that has a young daughter. That child is their miracle and while they struggle financially due to the mounting medical bills that comes from having a child that had to have a heart transplant and a resulting brain injury, you never see them without a smile on their face or a praise in their heart. They are beyond grateful for each and every struggle they face after having been smacked with the reality that it can all be gone in a moments notice.

Pay It Forward Friday Note

I simply packed a box of a few household supplies, toiletries and food items. Like I said, it doesn’t have to be much, but a little can mean the world to some. I then set out on my mission and delivered the box to their front porch. It isn’t about them knowing that I was the one who delivered those things, it is about paying the many blessings that I receive on a daily basis forward to someone else.

Sweetheart Whoopie Pie

With Valentine’s Day just around the corner I have decadent deserts on the brain. I wanted to make something special for the family and incorporate some of their favorites. So, here is a Sweetheart Whoopie Pie for MY sweethearts!

I had a pretty good idea of what I wanted to create but there were a few things I needed to pick up. So as I was strolling the aisles of ALDI (I LOVE, love, love their prices on produce. They have great prices on lot of things, but no one can beat their produce prices), picking up the fresh berries I needed I happened to spot this cute heart shaped pan and knew it would make my dish perfect!

Ingredients:
1 box Duncan Hines Red Velvet Cake
6 T butter
2 eggs
1 C powdered sugar
1 tsp cornstarch
Preheat the oven to 375°. Melt the butter and set aside to cool. In a large bowl, mix together the cooled butter, cake mix and eggs.

Drop one large spoonful into each muffin tin or onto a cookie sheet.

Bake for 9-10 minutes. Don’t overbake!!

While they are cooling, let’s make some filling. Now, I am going to give you the recipe for a regular batch of filling, but me, I double it. Yep, I like to make fat Whoopie Pies, and I like to dip the extra berries in the filling, ok… I like to just eat the filling.

Filling ingredients:

1/4 cup soft butter

4 oz. cream cheese

7 oz. marshmallow creme

Mix the butter and cream cheese well. Then fold in the marshmallow creme and BAM, you are done.

Once you have the cookie done and cooled, the filling made all you have to do it put it all together. Then I simply topped with an assortment of fresh berries. You can use whatever your favorites are but since we like them all, I added a variety. And those left-over berries…yeah, go ahead, dip them in some filling and sit back and enjoy!!
