We have known for some time that we are under-insured. But Whoa Nellie!! After I used Aflac’s Real Cost Calculator I almost had a heart attack…but that is WAY to expensive for our purse strings. No wonder the leading cause of bankruptcy in the United States is medical bills.I mean goodness gracious, did you know that the national average for a broken leg is $10,000??? Seriously, that is just crazy to me.

After looking at several scenarios using the Aflac Real Cost Calculator I have realized that we cannot afford to get sick. I mean I knew that medical procedures, illnesses and emergencies are expensive but we have been so lucky that we haven’t really had to deal with anything medical wise other than the regular cold, flu shots, etc for several years. VERY lucky (hang on, I have to go knock on wood). But it has been a concern of ours. Like I said, we know we are under-insured but just had no idea where to even start…and where we need to be.

What is the Real Cost Calculator (RCC)? The Aflac RCC is an illustrative, interactive tool that shows the average out-of-pocket expenses associated with a number of injuries and illnesses. Many insurance policy holders don’t know what their package includes or to what extent they will be covered in the event of common accidents and illnesses. The Aflac RCC was developed to show the health care costs that major medical insurance doesn’t cover.

The calculator includes average medical costs not covered by major medical insurance for several types of cancer, stroke, heart attack, diabetes, broken leg, as well as common childhood ailments, pneumonia and asthma. The RCC tool incorporates cost data from numerous sources, including governmental and public health organizations, health care providers, etc. In addition to medical costs, the tool shows the ongoing household expenses that can add up during a patient’s recovery period to give a more complete picture of the cost of becoming sick or hurt.

It is alarming. I have several friends who have been struck with the sky-rocketing out of pocket costs that major illnesses have burdened them with. It breaks my heart watching them have to decide things like should I take chemo or pay the mortgage? Do I have enough money to pay for prescriptions and food? How are we going to pay the power bill and have enough money to go back and forth to doctor visits? These are question that many people have to deal with on a regular basis and while it isn’t fair, it is reality…and why we are looking at just how un-insured we are and where we need to be and how to go about getting there.

Many of us don’t know what our insurance package includes or to what extent we will be covered in the event of common accidents and illnesses. We tend to think that we are covered by our major medical insurance – but often, we’re not.

The Aflac RCC is simple and easy to use. In three easy steps it breaks down:

1) medical and out-of-pocket costs including deductibles and copays;

2) household expenses during a treatment or recovery period, like rent or mortgage, car payments, child care and utility bills and;

3) out-of-pocket expenses like transportation for follow-up doctor’s visits, special travel arrangements, caregiving and other health care needs that continue while a patient is sick and out of work.

The RCC tool will also show users how Aflac policies could help offset out-of-pocket costs and educate consumers about how voluntary insurance can help fill the gaps in their health insurance coverage.

For us, I have decided it is time to meet the duck. Aflac offers supplemental insurance plans that can pick up where major medical insurance leaves off and pays benefits in cash that can be used on everything from medical care to daily living expenses, filling in the gaps left by major medical coverage. For nearly six decades, Aflac insurance policies have given policyholders the opportunity to focus on recovery, not financial stress, which is so important. And knowing that Aflac pays cash benefits fast, most within 4 business days…and are paid directly to the policy holder, not the hospital or doctor, so that they can be used to help pay bills, gas, groceries, childcare, etc.

Cinnamon Honey Fried Plantains

And OhMyStinkinHeck are they ever good!

Such an easy and delicious snack or desert without a ton of calories. The problem is, we all love them. So I have to make a ton in order for everyone to get their fill…or only make them when no one else is at home so I can have them all to myself!

There are no right or wrong measurements here. Which is one of the reasons these are so easy to make.

Plantains look a lot like a banana. But they are much harder to peel, the skin is much thicker. To open the plantains, I cut off each end and then I run a slit down the side with my knife and open them that way. Whether it is correct or not, it is how I find it easiest.

Once I have the peeling off I slice them at a diagonal.

I melt about 2 tablespoons of coconut oil over medium heat in a large frying pan. You can use other oil, I just happen to like coconut oil for these. The key is to make sure not to have your oil too hot. I am always tempted to turn it up so they will cook faster, but slow and patient is the best. You also don’t want to crowd them in the pan, let them breathe. It also makes it much easier when the time comes to turn them over.

And use a light hand…otherwise they just mush up and fall apart. You want them to brown on each side, and I turn mine pretty often just to make sure they cook evenly.

Once they are browned to your liking, remove from the pan and allow to drain on a paper towel, then sprinkle with a little cinnamon powder.

And then drizzle with honey.

And they are now ready to eat!

The grilled Cuban sandwich

There is a restaurant in Kennesaw GA that is absolutley fabulous. It isn’t a world renowned place, just a small little place with big personality. Papi’s is one of those treasure’s that you just happen upon, because someone told you about it. My someone was my sister and one night we RACED (shhh, don’t tell anyone that) through 2 states to get there before they closed just so I could try it. We were traveling and trying to decide what to have for supper and she started telling me about Papi’s, then I had to have it. So drive fast I did. We got there with 8 minutes to spare and being the gracious folks they are…they stayed and fed us. Once you visit, you will be going back, again and again. They have several locations, but Kennesaw is the closest to us. It is a good thing that they aren’t that close because if they were, that is where I would be every single day eating lunch. Every. Single. Day.

Sigh. I could live there. And eat fried plantains, which are actually called Tostones. And Cuban sandwiches. And Ropa Vieja. An well, everything else on the menu. So far I have loved everything I have had there.

I went on a mission. Since I can’t eat there everyday, and actually only make it there once or twice a year,  I needed to make a sandwich that would compare to Papi’s Authentic Cuban Sandwich. The thing about making a similar one…they use a secret sauce. So, I played around with what might work for quite some time and finally…I got close!! I had the whole family over and all 12 of us agree…it is GOOD! Really good. And since it is a little different from Papi’s, it needed a name that was a little different. Hence, The Ricky Ricardo was born!! I love watching Lucy and Ricky. No matter what kind of day you have had, a little Lucy and Ricky make it instantly better…and so will this sandwich!

 MoJo and Boston butt

I started with a Boston Butt pork roast. Simply place the whole roast in a crock pot and cook on high for about 5 hours or low for 10 hours with 1/2 a bottle of Goya Mojo marinade. Once it is fully cooked remove from slow cooker, discarding all the juices. Shred the meat and return it back to the slow cooker and pour the other 1/2 bottle of marinade over the meat, cook on low until ready to serve.

Then you need to mix up the spread.

Mix 1/4 cup mayonnaise, 1/4 cup mustard (I use spicy brown but any kind will do) and 1/2 Tablespoon Apple Cider Vinegar.

Make sure it is well blended.

Now, for the sandwich itself!!

You are going to need bread. And for me that is the hardest ingredient to find. I know that Publix sells Cuban bread, but alas, here in the boonies we do not have a Publix close by. In Dalton there does happen to be a Cuban bakery, but they were closed the 2 times I went by there. So after some research I found that Italian bread most closely resembles Cuban bread. So I went to the grocery store to grab some Italian bread…which they were out of. UGGGGG. I ended up with Bolillo Rolls, which are a Mexican roll that looks like a torpedo.

After you find the bread, you will need the pulled pork that you cooked, the sauce that you mixed up, some black forest ham and Swiss cheese. Assemble the sandwich by slathering some spread on one or both sides, layer some ham, cheese and pulled pork and put it all together.

After you assemble the sandwich you need either a panini press, a George Foreman type grill or a frying pan with a brick wrapped in aluminum foil. Because you need to press it down in the grill and brown both side of the sandwich.

Cuban Bread (or read above for alternatives)

1 pound black forest ham

sliced Swiss cheese

Boston butt, any size will do

1 bottle Goya Mojo marinade, halved

1/4 cup mayonnaise

1/4 cup mustard, I use spicy brown but any will do

1/2 Tablespoon Apple Cider Vinegar

 

Cook the Boston Butt in a slow cooker with 1/2 bottle of Mojo marinade for 5 hours on low or 10 hours on high. Remove the meat from the slow cooker and discard all the juices. Shred the meat, return to the slow cooker with the other half of the marinade and cook on low until ready to assemble sandwiches.

TO make the sauce, mix 1/4 cup mayonnaise, 1/4 cup mustard and 1/2 Tablespoon apple cider vinegar and set aside.

Assemble the sandwiches by spreading some of the sauce on the inside of the bun, layer ham, cheese and pulled pork. Top with other half of bread. Place in a Panini press, George foreman type grill or in a frying pan with a brick (wrapped in foil) on top and cook until both sides of the bread are browned.

Serve and enjoy.

However,  just about everyone reading this who shares recipes do so with no malicious intent, and bloggers realize that. This is intended for those who willingly violate federal law despite having received complaints, and having been reported, by knowingly and repeatedly stealing content from sites to place on their own.

If you see a site or facebook page with repeated complaints, a blogger who has to build new sites because their old ones are taken down, these are clues that such sites and pages are being run by repeat offenders who fully understand that what they are doing is illegal. A lot of people don’t realize that the websites we enjoy free of charge cost a great deal of money to operate. These sites and pages that run primarily off of stealing content from other sites take all food bloggers one step closer to not being able to afford to continue.

It’s easy for us to share a recipe. While photos are copyrighted, all of the bloggers I know welcome sharing photos as long as a link to the recipe is given to the recipe rather than the entire recipe reposted

 

I try to keep things organized. I seriously do. When you see the picture I am about to show you though you are going to think “OhMyStinkinHeck, She doesn’t have an organized bone in her body”. But in my defense, I share this room with Bric. And anytime company is coming over, this is where all the over-flow goes. And anytime I have a blog post/review I am working on, this is where the stuff goes. Add in all Bric’s stuff and it just gets out of hand quickly. VERY quickly. And don’t any of yall tell him I took partial responsibility for this mess! I mean it…I like to blame it all on him and if he thinks I even took an ounce of the blame I will never hear the end of it.

The rest of my house has kinda went the way of this room as well. With Erin and Matt moving in we are bulging at the seams with people and stuff. But, it is time to Spring Clean!! We are going to be getting the house back in order, scrubbed down, evicting spiders, dust-bunnies be gone! I am excited and looking forward to the reclamation process of taking my home back over from the clutter. So, let’s get started! my workplace

We are going to be working over the next few days to get our workspace organized, de-cluttered and CLEANED. When you see this room next it is going to look so much better thanks to some help from Fellowes Banker Box Stackable Storage boxes. We are going to be packing away the things we no longer use on a regular basis. All the years worth of paper that comes with being an adult…you know what I am talking about: tax papers, receipts, bank papers, insurance stuff, medical papers, etc…is going to be filed neatly away.
