Crockpot Meatballs

What an ugly picture. I know my picture is horrible but it is what it is. I tried several times but just couldn’t get one that was any better…until I plated them. Ok, maybe that one just looks better because I was ready to eat! Wouldn’t it be great if we could use some of that scanner software to transport food back and forth? Because let me tell you, these are fabulous, regardless of how ugly my picture is! This is Tate’s most favorite dish. He asks for it often and can never seem to get enough of them. Don’t get me wrong, we all love them, they are just Tate’s most favorite dish ever.

They are easy to make too. Don’t let the ingredient list fool you, they aren’t complicated to make at all! I always double or triple the recipe because one batch is never enough. And when one batch isn’t enough, you know it’s a good recipe. Yummm, let’s go eat!

Ingredients

6   cloves chopped garlic
2   (8-ounce) cans pineapple, save the juice
1   diced onion
1/2 cup Dijon mustard
1 lb cooked meatballs
4 cups ketchup
1/4 cup water
2 tablespoons Worcestershire sauce
1 cup of sugar
1/4 cup white Vinegar
2 TBSP Black pepper
3 tablespoons pineapple juice

Directions

Throw everything  except for the meatballs in a slow-cooker, mix well  then add the meatballs and cook on High for 4 hours or Low for 8 hours.

Crockpot Meatballs and Rice

My family likes the meatballs served on a bed of rice. You could do noodles or just meatballs with sides and it is just as good.

Sweet Roll Sliders, Loaded Potato Casserole and Roasted Asparagus
OhMyStinkinHeck! I can’t seem to get enough of these potatoes, it’s like a really bad habit that you want to break but when no one is looking you go back for more. And more. And more. And more. It has gotten to where when people are coming for dinner they ask “are you making those really good potatoes?” Ohhh, I most certainly can! (shhh, don’t tell, because in my book any excuse to make them is a GREAT excuse!)
They are easy to make and you will be so glad you did. Life just wouldn’t be complete without having these at least once, or a thousand times!

Mix together the cheese, bacon, sour cream and ranch. I just mix mine all in the pan I am going to cook it in…and I use a lot of aluminum pans. I have a friend that works for the company that makes them and can get a really good deal which makes for easy clean up and they can be recycled!

It’s going to look like a gloppy mess, but I assure you, they are divine!

Add in the hashbrowns and mix well.

Bake on 400 degrees for about an hour.
YUMMY!
Let’s go eat.

Ingredients:
2 (16oz) containers sour cream
2 cups cheddar cheese, shredded
2 (3oz) bags real bacon bits
2 packages Ranch Dip mix
1 large (28 – 30oz) bag frozen hash brown potatoes – shredded kind
Directions:
Combine first 4 ingredients, then mix in hash browns.  Spread into a 9×13 pan.  Bake at 400 for about 60 minutes. If you want to make several, these freeze great, then just take out of the freezer and bake when you are ready.

Nicole took me to a Chinese Restaurant in China Town while I was in New York City. I love Chinese Food! At least I thought I did. I have never had anything like what we ate..and after the meal I had I don’t think I will ever be able to eat at the little Americanized place that I am used to. The food was delicious. All of the fried rice I have had has always been yellow…and it tastes nothing like the fried rice from Hop Kee. I didn’t order, I left it up to Nicole since she is a regular there and she did a fantastic job. I do not have pictures because my batteries died and I forgot to bring extra….I did pick some up after we left the restaurant…and I did bring home all of the left-overs for my family to enjoy…so you get pictures after it has traveled from NY to GA.

I can’t tell you what any of it is other than the pork fried rice. Maybe we can get Nicole to pop in and leave a comment on what we ate. About all I can say is that it was delicious…even my family loved it and said it was absolutely the best Chinese Food they had ever had.

So, if you are ever in New York City and are looking for some fab food, check out Hop Kee which is located in China Town, on a corner. You have to look though or you will miss it because it is downstairs below the street level…but it is worth every step you take for it.

Then we went to Little Italy…and this is what we happened upon:

An Italian Bakery. I just had to bring everyone home a cannoli. I could have spent a TON of money in here. Everything was so pretty that it looked artificial. And it was slap your mamma good! Nicole sent me home with a cup full of little pastry balls that had been rolled in honey…I would show you a picture, but they are all gone. They didn’t last long at all. We have no control. I’m sorry.
