Ahhh, pork chop casserole. Such a comfort food to me.

This was actually my Aunt Net’s recipe, but I can remember my grandmother making it for us. See, growing up we always got off the bus at my grandparents house until we were old enough to go home alone and when you walked through the door you were immediately hit with the smells of a home cooked meal. During the spring and summer there was always home made lemonade and during the fall apple cider. My favorites were this recipe I am bring you today,  her homemade biscuits which she promptly buttered as soon as they came out of the oven and her homemade vegetable soup with cornbread. We never ate crackers with our soup…always cornbread.

There is one day I will never forget. Me and my older sister got off the bus and as we walked in to my grandparents house the smells of this dish hit us. Throwing book-bags to the side we scrambled to get hands washed and get ready to eat. My grandmother was hanging her wash out back, and my grandfather who was a BIG man in my eyes was in the basement working on some project or another. My older sister decided to get some of the lemonade for herself that was sitting on the counter in a mason jar. As she turned it up to get a big swig she suddenly started spitting and sputtering…she had just drank bleach. She ended up being fine after an afternoon spent in the emergency room. Ok…so maybe she wasn’t really fine, we still wonder about her brain function today at times, but they said she would be just fine. I never did get to eat any of the pork chop casserole that night. So, let’s make it today…

You are going to need about 4-6 pork chops, a can of cream of something soup (whatever your flavor of choice is), an onion, some potatoes and a cup of milk.

Brown both side of pork chops

Flour and brown the pork chops.

Slice the onion and potatoes and place them in a baking dish.

Top with the browned pork chops.

Then pour the cream soup and milk over top.

Bake on 400 degrees for 45 minutes.

Serve with your favorite sides and enjoy!

Pork Chop Casserole

4-6 pork chops

1 onion (sliced into rings)

4-6 potatoes (any kind, sliced into rounds)

1 can cream of anything soup (I usually use Cream of Celery or Cream of Mushroom)

1 cup Milk

Flour and brown the pork chops. Layer a 9 X 13 baking dish with the sliced onion. Then top the onions with the sliced potatoes. Add the brown pork chops on top of the potatoes and then pour the can of cream soup over the top. Pour the milk over the top and bake on 400 degrees for 45 minutes.

Hawaiian Luau Sliders

Let’s Luau!!

These little sandwiches are PACKED with flavor and will leave you wondering why in the heck you have waited so long to make them. Burgers, Hawaiian Rolls, Caramelized Onions and Peppers, sliced Avocado, freshly made guacamole, lettuce tomato and cheese. Yummmmmm!!!

First we need to season the ground beef. Take 1-2 pounds of ground beef and add in one packet of McCormick Grill Mates Hawaiian Luau Seasoning blend. Mix well.

I then roll my meat out and use an old-fashioned biscuit cutter to cut my patties out. That way they are all perfectly round and uniform in size…but you can just pat them out if you want, either way will work just fine.

Place in a pan, on medium heat and brown each side of the patties, because these are mini-sized, it doesn’t take very long. If you choose to you can also throw them on the grill.

Next, I throw my red pepper sliced and onion slices in a pan with about a tablespoon of olive oil and let them caramelize. I cut my slices very thin, remember…we are making mini-burgers and if you slice them too thick they just take over, you want all the flavors to meld, not dominate.

These are the toppings that we like to use. Lettuce, Tomato, Swiss Cheese and fresh sliced Avocado.

Chicken Pot Pie

This is the funniest thing to me. When I make this Chicken Pot Pie for guests they always ask me for the recipe. Ummm, well…it is REALLY, really, really easy to make. They are always astounded that it isn't more involved than what it is. I have hesitated about posting this recipe for a long time but at the urging of several friends…here it is.

Chicken Pot Pie 1

Mix one can of cream of chicken soup and one can of  mixed vegetables that have been drained.

Today I am using some shredded chicken that I had left over from another recipe but normally I just use a large can of chunked chicken, drained. So long as you have at least a cup or two you are good and the great thing is you can add as much or as little as you want. So long as it is already cooked you can use either or.

And the kicker…I use a store bought pie crust. I always buy the kind that comes rolled up in a box.

Unroll one of the pie crusts and line it in a 2 quart baking dish.

Fill it with your soup, vegetable and chicken mix.

Unroll the second pie crust and place it on top, sealing as best you can.

Then cut a slit in the top for ventilation.

Bake on 400 degrees until the crust is golden brown.

And guess what…I don't have a picture of the final dish. Why you ask?? Well, it was already gone before I was able to get one. Yes, it goes that fast in my house.

Chicken Pot Pie

1-2 cups cooked shredded or chunked chicken (drain if you use canned)

1 can mixed vegetables, drained

1 can cream of chicken soup

1 box pie crust

Mix the cream of chicken soup, the vegetables and chicken. Place one part of the pie shell into a 2 quart baking dish. Fill with the chicken mix. Top with the second pie shell and seal edges. Cut a slit in top for ventilation and bake on 400 degrees until golden brown.

My Mama always made the best meatloaf. And fried squash. I still can’t get my squash to come out like her’s and have to con ask her to fry mine when we want it to this day. But I can make meatloaf like she does! See, I don’t like meatloaf with bread crumbs, or saltines, or any other filler like that. I understand that there are a thousand different ways to make meatloaf and if however you like yours is fine for you but I want MEATloaf. And that is just what hers was. Bric always told me he didn’t like meatloaf…until I made it for supper one day and didn’t give him any other option. He has since become a believer that it is all in how it’s made…and LOVES this recipe. And to boot, it is super easy!

Gather your ingredients

Mix everything together and place in a baking dish

(my 8 X 8 was currently home to a batch of brownies so I had to use my oblong one)

Bake on 350 degrees for about 45 minutes and drain excess grease

Top with some ketchup and bake about 15 minutes longer.

Serve and enjoy!

Mama’s Meatloaf

1 1/2 – 2 pounds ground beef (give or take a little)

1 egg

1  6 oz. can tomato paste

1 package onion soup mix

 

Mix all together and place in a 8 X 8 pan or 2 loaf pans. Bake on 350 degrees for 45 minutes to an hour.

I usually bake mine for about 45 minutes, then drain any excess grease off  then squirt a little ketchup on the top.
