OhhhhMyStinkinHeck! I can’t say enough how good these are. Recently I was sent some chocolate shavings by Chupon Chocolate. For a couple of days they sat there and taunted me. I mean really, how can you just let chocolate sit there?? Every time I would walk past them they would scream at me “Drink me, You know you want to!” But I also knew I wanted to make something with them. Something to satisfy my love of sweets. And my love of chocolate. After pondering it a day or two I decided on cookies.

After making the cookies and icing about half of them I decided they would also make fabulous whoopie pies, and that is what happened to the other half.

I can’t quit eating these. Seriously. I am probably going to gain 500 pounds between now and Christmas.

These are really easy to make. Simply mix the cake mix, butter flavored crisco and eggs.

Warm milk in microwave for 30 seconds, add the Chupon Mocha, mix well.

Add into batter. The batter is going to be pretty thick. That is the way it is supposed to be.

Bake for 8-10 minutes on 350 degrees.

Gather up the ingredients for the icing. I love this icing! Of course I love marshmallow cream alone so of course this is going to be one of my favorites.

Ice the cookies

sprinkle with Chupon Mocha Chocolate shavings

 And sprinkle with chocolate shavings.

Or, slap a bunch of icing in the middle of two cookies and you have a whoopie pie!

 

CHUPON MOCHA COOKIES OR WHOOPIE PIES

1 chocolate cake mix

1/2 cup butter-flavored shortening

2 eggs

3 Tablespoons milk

3 Tablespoons Chupon Mocha Chocolate

Preheat oven to 350. Combine cake mix, eggs, shortening in the bowl of a heavy-duty mixer and mix until well combined. Warm milk in a mug in the microwave for 30 seconds and add chocolate, mixing well. Add the chocolate milk to the dough and mix well. Drop dough by the tablespoon onto a baking sheet and bake for about 8-10 minutes or until the cookies appear done but are still soft in the center. Do not over-bake. In my oven 8 minutes is perfect.

ICING

1/4 cup (1/2 stick) margarine or butter, softened

1 jar (7 oz.) Marshmallow Creme

1 tsp. vanilla

1 pkg. (16 oz.) powdered sugar

1 to 2 Tbsp. milk, divided

Place margarine, marshmallow creme and vanilla in small bowl; beat on medium speed until well blended. Gradually add sugar, beating after each addition until well blended. Mix in 1 Tbsp. of the milk. Add remaining 1 Tbsp. milk if necessary for desired spreading consistency. I only needed to use one tablespoon of milk because I wanted mine to be a little on the thicker side.

Aptly named 8 O’Clock coffee saves the day in my house more than any other coffee. Morning comes and Bric can be found grinding the beans, brewing his pot of coffee, fixes his mug and then transforms into a human. Before, he is a bear.  In all the years that we have been married I have been banned from touching HIS coffee pot. He will share with me after it has been made but if I were to try to make a pot he would ring my neck. I am just not a good coffee maker. But seriously, while I may not be able to brew it, who doesn’t love a good steaming cup of joe? He loves the 8 O’Clock coffee because of the rich, smooth taste, it comes in whole bean form AND while it taste like the more expensive brands it is affordable and I can usually find a coupon for it! Win, Win!!

And even more, who doesn’t love the taste of sweet, buttery caramel mixed with the rich aroma of a perfectly brewed cup of coffee? Perfect to wake up with, as an afternoon pick-me-up, or as a sweet treat to indulge in. AND, even I can make it!

Caramel O'Clock Coffee Recipe Card

Caramel O’Clock Coffee

1 Cup hot brewed Eight O’Clock Original Coffee
2 Tbsp Milk
1 Tbsp Caramel Syrup
Whipped Cream
Chocolate Toffees, chopped into small pieces

Drizzle half of caramel syrup into the bottom of mug. Pour coffee. Add milk. Add whipped cream. Drizzle remaining caramel syrup over whipped cream. Garnish with chocolate toffees.

Coffee is a big deal in my house. We love to go to that big name coffee place and grab a specialty coffee but gosh darn it, there isn’t one close by and they are expensive. So, we decided to work on making some of our favorites at home using our Keurig and Green Mountain Coffees NEW Barista Prima Coffeehouse K-Cup portion packs.

We have had a little too much fun doing so. I brought you our homemade version of a Pumpkin Spiced Latte HERE. Today, we are making a Salted Caramel Mocha Latte! It just happens to be my favorite. Coffee, Caramel and Chocolate, how can you go wrong?

 

Salted Caramel Mocha Latte

Ingredients:

1 cup milk, steamed
1 cup very strong coffee (I used Green Mountain Coffees NEW Barista Prima Coffeehouse K-Cup Italian Roast but any of the stronger blends will work)
1 tablespoon cocoa powder
2 tablespoons of sugar
2 and 1/2 tablespoons caramel coffee syrup (I bought mine at our local dollar store. Feel free to adjust to your taste)
Whipped cream
Caramel Sauce
1/8 teaspoon sea salt or kosher salt

Directions:

Prepare your Keurig and brew 1 cup of coffee

In a pot, heat up one cup of milk until it is steaming. Froth the milk with a wire whisk or a blender until it is nice and foamy.

~If you use a blender…make sure you put your lid on good. I had a BIG mess. LOL~

In your coffee cup, mix together the prepared coffee, cocoa powder, sugar, and caramel coffee syrup until the sugar and cocoa powder are dissolved and there are no lumps. Pour the milk foam over the top of the coffee/mocha mixture and stir. Top with whipped cream, a generous drizzle of caramel sauce, and your pinch of salt. Another way you can play with this recipe…since I do not liked whipped cream on top of mine I simply added the caramel sauce and salt into my cup and mixed it up.  DE-lic-ious!! Think I will go have another.

How easy is that? Yep, simple! And delicious! And costs so much less than visiting a coffee-shop!

I need to drink more water.

I think the majority of us can say that but don’t do much about it. I have been working on increasing my water intake little by little for awhile now but I don’t like to drink it straight from the tap. To me it tastes funny and it smells funny so we would always buy bottled water to drink and that gets expensive.

I was recently asked to check out the new Zuzo Water Filtration System. OhMyStinkinHeck! This is one sweet system! The Zuvo is a new, easy to use, eco friendly device.
