Let’s Get Ready!!

I am so excited!! It is time to start making Christmas cookies, candies and treats galore!
I love cooking during the holidays because it gives me excuse to make things that I don’t normally make at any other time of the year. Things like Orange Balls! I love Orange Balls, they make me happy. You can find that recipe among others that I did last year in the Recipe section. So, grab your fat burner put on your expandable pants and lets get ready to cook.
You will be seeing several of my favorites over the next few weeks. Everything from appetizers to desserts. Christmas Day here is a very laid back time. The day starts with a huge beakfast for anyone who wants to show up and is then changed to finger foods and snacks that are replinished throughout the day for all of the people who drop by just to celebrate and spend a little time with us. So what are we going to be having this year? Drop by for a visit over the days to come for a glimpse into our Cookie exchange and preparations of the feast to be enjoyed.

Stuffed Peppers
October 11th, 2009WOW, these are DELICIOUS! We love them and they are an often asked for dish here. If you have never tried Stuffed Peppers, I highly suggest that you d0. The first time I put these on the table I had a few turned up noses, but every plate came back to the sink clean. Tate is the one who really thought that he wouldn’t like it, now he is the one who is constantly asking when we are having them.
* 4 green bell peppers
* 1 tablespoons butter
* 1 tablespoon olive oil
* 1/2 cup chopped onion (I double)
* 1/2 cup chopped celery (I double)
* 1 can (14.5 ounces) diced tomatoes (I double) AND, you can drain these or not, depends on the consistency of sauce that you want. I do drain because I don’t like a lot of juice left in my sauce.
* 1 can (8 ounces) tomato sauce (I double)
* 1 clove garlic, crushed (I double)
* 1 teaspoon dried leaf oregano (I double)
* 1/2 teaspoon dried leaf basil (I double)
* 2 teaspoons salt, divided
* 1/2 teaspoon ground black pepper, divided
* 1 egg, lightly beaten
* 1 1/2 teaspoons Worcestershire sauce
* 1 1/2 pounds lean ground beef or chuck
* 1 1/2 cups cooked long-grain rice
* shredded mild Cheddar cheese, about 1/2 to 3/4 cup
Cut tops off peppers; remove seeds and membranes. Chop edible part of tops and set aside. Rinse peppers under cold water. Place peppers in a large pot; cover with salted water. Bring to a boil; reduce heat, cover, and simmer for 5 minutes. Drain peppers and set aside.

Heat olive oil and butter in a large skillet over medium heat until hot. Sauté chopped green pepper (from tops), chopped onion, and chopped celery for about 5 minutes, or until vegetables are tender. Add tomatoes, tomato sauce, crushed garlic, oregano, basil, 1 teaspoon salt, and 1/4 teaspoon of pepper. Simmer for about 10 minutes.

In a large mixing bowl, combine egg with remaining 1 teaspoon salt and 1/4 teaspoon pepper, and Worcestershire sauce. Gently stir to blend; add ground beef, cooked rice, and 1 cup of the tomato mixture. Mix well. Stuff peppers with meat mixture and place in a 3-quart baking dish. Pour remaining tomato mixture over the stuffed peppers. Bake at 350° for 55 to 65 minutes. If desired, top stuffed peppers with a little shredded Cheddar cheese just before peppers are done; bake until cheese is melted.
(The sauce has not been doubled in this recipe, see what I mean about needing more sauce?)

Of course mine would slap me back and I would be in Canada.
In the ingredients you will see notes of some things that I double. That is because we like more sauce around the peppers and we like to pile it around our plate. You will agree after you make these…at least I think you will. ALSO, I only cook 4 peppers when it is just us. The mix will make several more. What I do with the left-over mix is bake it in a casserole dish at the same time I bake the peppers, then place it in the fridge for a meatloaf type meal the next day. So, you basically get 2 meals out of 1.

Grillin and Chillin
July 27th, 2009I am exhausted! We spent the weekend out and about playing. We went over to the town of Summerville/Trion to my cousins house on Saturday to spend the WHOLE day swimming and cooking and eating. When I say that the grill was going ALL day, I am not exaggerating. We grilled marinated ribs, rubbed ribs, BBQ ribs, marinated chicken, chicken wings and we grilled all the vegetables. I say we pretty loosely here. Mr. Mike did most of the grillin and I did most of the preparing.
We dragged my niece “College Kid” along with us and celebrated her birthday while we were there. I can’t believe that she is 19. It seems just yesterday that she was born.

Bric even got to go which is a real rarity. He is always on call and rarely gets to go with us when we decide on having a fun day. It was so nice to spend the day just hanging out having fun with him included. Hopefully before too long that will change a little.

My cousin’s littlest one decided his new name was “Big Guy”. She called him that all day, it was so funny. But after he spent most of his time throwing the kids in the pool and letting them jump off of his shoulders I think he deserved the title.

I think these two were plotting something. Which would be nothing new.

24 Days? You Have To Be Kidding!
December 1st, 2008I just can’t believe it is December 1st. It is just beyond my comprhension. And that Christmas is in 24 days. I am not ready. Of course, I am never ready. I have shopping to do. Yes, I have at least done a little, but not a lot. I have to find the perfect ornaments. See, my sisters and I, we only exchange ornaments. And it is important that they be the perfect ones. And I haven’t found them. I have looked, but nothing seems to be right. I have candy to make, and lots of it…of course for me, that is the fun part. I love to be in the kitchen where it is warm and cozy and smells nice…I hate to shop where it is cold and loud and insane. I like the kind of shopping where I know exactly what I am getting, where I am going to get it and I just run in, get what I need and leave. I don’t like wandering aroung the malls or big stores aimlessly trying to find that perfect gift for this person or that. And shopping with The Princess…UGGG. She could look for HOURS. It drives me NUTS! I am just not a shopping kind of person. I am trying to work myself up into a mood where I can handle going to the mall…but it hasn’t happened yet. It needs to happen soon though.
It’s Here!
November 29th, 2008It is officially here. The Holiday cooking season…for me anyway. I will be cooking lots of sweet stuff from now until Christmas Day. Some of the recipes I have posted, others are to come. At Mr. Technosavy’s place of employment everyone looks forward to a gift basket, filled to the brim with all kinds of different goodies instead of promotional business gifts. His co-workers have already started talking about it and telling the new people what to expect…but I plan to change it up a little this year. In the past I have always done individual packages, sent to them via Mr. Technosavy. This year I have thought about doing trays of stuff and doing a reception type thing one afternoon, with boxes on the side for them to take home. That way I can do things for them I haven’t been able to in the past…like a cheese ball with crackers, hot buttered lemonade, hot apple cider, etc. What are your thoughts? Any brilliant ideas to make it seem special?
