Wow, this weekends flew by. And I can tell that it is Monday. I think I am going to need bags and bags and bags of coffee bags to get me through today. Notice how I wen from cups to bags. Even skipped the pots of coffee. Heck, I just need a coffee infusion I think.

Oh, who am I kidding? I can’t think. After all it is Monday…and I haven’t had near enough coffee yet.

OCD

Aptly named 8 O’Clock coffee saves the day in my house more than any other coffee. Morning comes and Bric can be found grinding the beans, brewing his pot of coffee, fixes his mug and then transforms into a human. Before, he is a bear.  In all the years that we have been married I have been banned from touching HIS coffee pot. He will share with me after it has been made but if I were to try to make a pot he would ring my neck. I am just not a good coffee maker. But seriously, while I may not be able to brew it, who doesn’t love a good steaming cup of joe? He loves the 8 O’Clock coffee because of the rich, smooth taste, it comes in whole bean form AND while it taste like the more expensive brands it is affordable and I can usually find a coupon for it! Win, Win!!

And even more, who doesn’t love the taste of sweet, buttery caramel mixed with the rich aroma of a perfectly brewed cup of coffee? Perfect to wake up with, as an afternoon pick-me-up, or as a sweet treat to indulge in. AND, even I can make it!

Caramel O'clock Coffee

It’s love at first brew.

The best part—you don’t even have to leave the house to enjoy this great creation. It has become my favorite morning pick me up. Coffee, Caramel, AND Chocolate. How could you go wrong?!!

Get to brewing, throw on an apron and let’s be Barista’s!

“I was supplied with a sample of 8 O’Clock coffee and some of the information to help facilitate this post. All opinions are my own and were in no way influenced by receipt of sample. We really do drink and love 8 O’Clock coffee and have used it for years. It’s just that good. And if you love caramel…and chocolate…and coffee, you are going to love it even more. I couldn’t have been happier that a fat tick on a skinny dog when I tried it!”

Coffee is a big deal in my house. We love to go to that big name coffee place and grab a specialty coffee but gosh darn it, there isn’t one close by and they are expensive. So, we decided to work on making some of our favorites at home using our Keurig and Green Mountain Coffees NEW Barista Prima Coffeehouse K-Cup portion packs.

Keurig

We have had a little too much fun doing so. I brought you our homemade version of a Pumpkin Spiced Latte HERE. Today, we are making a Salted Caramel Mocha Latte! It just happens to be my favorite. Coffee, Caramel and Chocolate, how can you go wrong?

Salted Caramel Mocha Latte

salted caramel mocha latte ingredients

Ingredients:

1 cup milk, steamed
1 cup very strong coffee (I used Green Mountain Coffees NEW Barista Prima Coffeehouse K-Cup Italian Roast but any of the stronger blends will work)
1 tablespoon cocoa powder
2 tablespoons of sugar
2 and 1/2 tablespoons caramel coffee syrup (I bought mine at our local dollar store. Feel free to adjust to your taste)
Whipped cream
Caramel Sauce
1/8 teaspoon sea salt or kosher salt

Directions:

Prepare your Keurig and brew 1 cup of coffee

In a pot, heat up one cup of milk until it is steaming. Froth the milk with a wire whisk or a blender until it is nice and foamy.

~If you use a blender…make sure you put your lid on good. I had a BIG mess. LOL~

In your coffee cup, mix together the prepared coffee, cocoa powder, sugar, and caramel coffee syrup until the sugar and cocoa powder are dissolved and there are no lumps. Pour the milk foam over the top of the coffee/mocha mixture and stir. Top with whipped cream, a generous drizzle of caramel sauce, and your pinch of salt. Another way you can play with this recipe…since I do not liked whipped cream on top of mine I simply added the caramel sauce and salt into my cup and mixed it up.  DE-lic-ious!! Think I will go have another.

How easy is that? Yep, simple! And delicious! And costs so much less than visiting a coffee-shop!

I love Saturday mornings! It is always a quiet and peaceful time for me. Everyone still sleeping, no demands to get everyone out the door and where they need to be. No rush to get dressed and ready for the day. Just lazy and peaceful.

This morning the birds are singing their good morning song and I am brewing up concoctions with the Keurig. I have been working on making some of my favorite specialty coffee drinks here at home and goodness does my house ever smell good! I know that next week is going to be one of those run, run, hurry, hurry weeks so I am savoring this little glimpse of sanity while I can.

Japanese Maple Tree

This is my favorite thing to see every morning. It is a Japanese Maple and is in full color! I LOVE Fall and this is always my sure sign that the heat is gone for several months, it’s time to pull out those pool covers and the hooded sweatshirts! Thanksgiving will soon be here and then Christmas. My two most favorite holidays!! Ahhh, my soul is happy. Now to go grab another cup of that wonderful smelling coffee! Have a great day everyone!!
