What do you do with a bag of plums that are going to go bad on you very, very soon if you don’t do something??

Why, make a plum cobbler of course!

bowl of plum cobbler

I love cobbler and I love how easy they are to make.

plums

Just choose your fruit of choice. I am pretty lucky to be able to find fruits that are clearance priced at my local grocer. This bag of plums was .99!! But really you can use any fruit, even frozen or canned. And the cobbler recipe that I use is the same one my grandmother used. It has simple ingredients and is easy to throw together at a moments notice. It is also a very popular recipe for many families all across the nation.

diced plums

To make this deliciously easy cobbler simply chop up 4-6 cups of which ever fruit you choose.

If it is a tart fruit you are going to want to add about a cup of sugar to the fruit to sweeten it up a little.

Melt one stick of butter in a 8 X 12 baking dish. Mix together 1 cup of flour, 1 cup of sugar and 1 cup of milk. Pour over the melted butter in the baking dish. Add your fruit to the top, but do not stir.

Bake on 375 degrees for 40-45 minutes.

It is that easy!!

Yesterday afternoon I loaded up a basket of peaches, a box of tomatoes and away I went. We made homemade spaghetti sauce and we also made peach preserves…and we canned it all except for the sauce we ate for supper.

The bad part, I never even took my camera out of the bag. There is not even ONE picture from the afternoon.

I know. It a tragedy. All I can say for myself is that I was having too much fun.

We also made a Peach Cobbler out of some of those fresh peaches…and all I can say about that is Yummm!

And that I am probably going to be needing some information on diets that work because there is too much good stuff coming in from people’s gardens at the moment and I can’t seen to be able to stop eating. If you send intervention, make sure they are strong willed, otherwise they will just be sucked in with me.

Carter's Lake

Today was Engineer’s Day at Carter’s Lake. It is a yearly event for the employees and their families of the Corps of Engineers, Carters Project and since that is where Erin works we all went. Each employee was to sign up to bring a covered dish. The meat and drinks were covered by the Corp. So….Erin signed up to carry a dessert.

Well, at 10 PM last night Erin decided to start to work on what she was going to carry. Let me tell you, 10PM is NOT the time to start. She didn’t have all the ingredients she needed and it isn’t like you can just run out to an all night grocery store around here.

the kids at the table

So, at 7 AM this morning I was deciding what I was going to cook and carry on Erin’s behalf. All I can say is thank goodness for Christy Jordan at Southern Plate and her friend Bill Gent, a regular reader who contributed a easy dessert recipe that sounded like something I could make quickly and easily. I ran out to the grocery store, grabbed everything I needed and was done and ready to go by 10 AM!

I made a Cherry, Apple and Peach Cream Cheese Cobbler.

Thanks again to Christy and Bill, you saved the day!

The kids even got to have fun swimming and playing frisbee.
