We love pork chops and they are always something that I can find on sale which is a huge bonus when you have as many folks around the table as I sometimes have. I love it that people like to come for a visit and a meal. I like to cook for folks and it makes my day when they like what I cook. Sometimes there are as many as 12-14 on a given night, throw in a party and we may just be busting at the seams…but that is alright by me! Recently as people gathered round the table, I informed them that they were going to be the Guinea Pigs of something new I just happened to be trying out that night.

Chop up the garlic. and then I simply made a dip of milk and eggs, and a dip of bread crumbs, parsley and Parmesan cheese. Then I dipped the pork chops in the wet mixture, then dipped them in the dry mix. While you are doing that be letting the olive oil in a large frying pan, that you can also place in the oven, heat up over medium heat, once thoroughly heated, saute the garlic for a few minutes. Once the garlic has cooked for a few minutes remove it from the pan.

Add the pork chops to the pan and brown on both sides. It takes about 5 minutes or so.

If you have to do this in a couple of batches, that’s ok…I do too.

Once all the pork chops are browned place them back in the skillet to go into the oven for about 25 minutes or so.

I served these with a Garlic Pasta that is absolutely delicious. Everyone was oooh’ing and ahhh’ing with every bite. The conversation around the table came to a stand still as everyone was savoring each bite. And that to me screams THIS IS A HIT!

Italian Pork Chops

3 eggs, lightly beaten

3 tablespoons milk

1 1/2 cups Italian seasoned bread crumbs

1/2 cup grated Parmesan cheese

2 tablespoons dried parsley

2 tablespoons olive oil

4 cloves garlic, peeled and chopped

4 pork chops

 

Directions

You want to preheat the oven to 325 degrees. Then in a small bowl, beat together the eggs and milk. In a separate small bowl, mix the bread crumbs, Parmesan cheese, and parsley. Set aside.

Heat the olive oil in a large, oven-proof skillet over medium heat. Then you want to stir in the garlic, and saute it until it is lightly browned. Remove garlic from the pan and reserve for other uses. I can ALWAYS find stuff to use garlic in…so I just put mine in a little bowl for later.

Dip each pork chop into the egg mixture, coating it well.  Then place the pork chop into the bread crumb mixture, coating evenly. Place the coated pork chops in the skillet, and brown abut 5 minutes on each side. Once the pork chops are browned, place the skillet and pork chops in the oven, and cook for about 25-30 minutes.

Then serve with your favorite sides!

One of my favorite things to cook and eat are pork chops. There are so many different ways you can fix them and they are quick and easy to fix. They are also one of the most affordable meats around. In other words, we have them often. I love it when I can find a pork loin on a really good sale and then have the butcher cut the whole thing into chops, that usually provides us with at least 10-15 meals worth of meat for about $10-$12. And that folks is some affordable eating, without feeling deprived. So, when you see recipes for pork chops I suggest that you Pin them, print them, write them down or however you save them because in my opinion, you can never have to many recipes for this versatile meat!

This time I am using bone-in chops because that was what was on sale. I got a pack of 8 for $3.42. But you can use whatever is on sale in your area, or whatever you have on hand. These are so easy and delicious that your family and friends will adore you for introducing them to this fabulous dish.

You simply sprinkle them with some seasoning salt and pepper, brown both sides in a frying pan with a little oil.

Add a cup of chicken broth (which I also found on sale and with coupons got for .24 cents a box!) and 2 sliced onions.  Cover and simmer for 20 minutes. Turn the chops and cook (uncovered) for 20 more minutes.

Ingredients

1 tablespoon olive or vegetable oil

4 pork chops (any cut will do)

3 teaspoons seasoning salt

2 teaspoons ground black pepper

2 onion, cut into strips

1 cup chicken broth

Directions

In a small bowl mix the seasoning salt and pepper, then rub each pork chop with a little bit of the mixture. After you get the chops ready heat oil in a large skillet over medium heat. Brown the pork chops on each side. Add the onions and chicken broth to the pan. Cover and reduce the heat to a simmer and cook for 20 minutes. After 20 minutes turn the pork chops, sprinkle them with the remaining seasoning salt and pepper mix and cook until water evaporates and onions turn light to medium brown. Remove chops from pan, and serve with onions on top.

 I love anything citrus and use limes and lemons in many dishes around here and as a marinade for lots of stuff.

Gather up your ingredients. I forgot to set out the olive oil, the red pepper flakes and the cumin. Ooops, but I did add them in when your supposed to.

Add all the ingredients (except the pork chops) together in a bowl or dish and whisk vigorously.

Add the pork chops and marinate for 2 or more hours.

You can then bake, grill or fry the chops and serve with your favorite sides.

Ohhh, goodness, I can’t wait to dig in!!

 

 GARLIC CITRUS PORK CHOPS

Boneless Pork Chops

1/2 Cup Lime Juice (or lemon juice)

2 Garlic Cloves, minced

1/2 teaspoon Red Pepper Flakes

1 teaspoon ground cumin

1/8 teaspoon salt

1/8 teaspoon black pepper

1/3 cup olive oil

2 Tablespoons Worcestershire sauce

Whisk all ingredients together and add pork chops. Marinate for at least 2 hours.You can then grill, bake or fry these. They turn out great any way you choose. If baking: 350 degrees for 30 minutes. If frying: Medium/High heat for 4 minutes per side.

Have you ever cooked with a fruit vinegar? I had not until this week…and man o’ man, I have been missing out! I took some pork chops, salt and peppered them, put a little olive oil in a pan and browned on both sides. THEN, came the heavenly bliss! I just added some of this on top:

I let the chops simmer in it for about 10 minutes and oh my stinkin heck they were delicious!!

Add just a little Olive Oil to your pan.

Salt and Pepper to suit your taste.

Brown on each side. Then coat with some of the fruit vinegar and let simmer. I used A L’Olivier Mague (Mango) Fruit Vinegar.

YUMMMY, these were soooo good. I can’t wait to try it on Chicken next.
