Southwest Ranch Chicken Tacos

I love taco’s! I love the taste, I love that they are so easy to throw together, I love that they are budget friendly.

And these delicious babies are not only tasty, tasty, tasty but super easy to make!

Filled to the brim with flavors sure to make your taste buds sing and your kids begging for more.

Throw on your favorite toppings and you have a meal sure to please.

3 cups cooked chicken, shredded

1 pkg taco seasoning

1/2 cup ranch dressing

1/2 cup salsa

Tortillas, lettuce, tomatoes, cheese, sour cream, guacamole, etc. In other words, whatever toppings you like the best.

To make, heat a large skillet on medium high heat. Add the chicken and let it warm for a few minutes. Sprinkle the chicken with the dry taco seasoning, stirring to coat all of the chicken. Heat for about 5 minutes. Add the ranch dressing and salsa and heat for an additional 3 minutes. Build taco with toppings of choice.

This is the funniest thing to me. When I make this Chicken Pot Pie for guests they always ask me for the recipe. Ummm, well…it is REALLY, really, really easy to make. They are always astounded that it isn't more involved than what it is. I have hesitated about posting this recipe for a long time but at the urging of several friends…here it is.

Chicken Pot Pie 1

Mix one can of cream of chicken soup and one can of  mixed vegetables that have been drained.

Today I am using some shredded chicken that I had left over from another recipe but normally I just use a large can of chunked chicken, drained. So long as you have at least a cup or two you are good and the great thing is you can add as much or as little as you want. So long as it is already cooked you can use either or.

And the kicker…I use a store bought pie crust. I always buy the kind that comes rolled up in a box.

Unroll one of the pie crusts and line it in a 2 quart baking dish.

Fill it with your soup, vegetable and chicken mix.

Unroll the second pie crust and place it on top, sealing as best you can.

Then cut a slit in the top for ventilation.

Bake on 400 degrees until the crust is golden brown.

And guess what…I don't have a picture of the final dish. Why you ask?? Well, it was already gone before I was able to get one. Yes, it goes that fast in my house.

Chicken Pot Pie

1-2 cups cooked shredded or chunked chicken (drain if you use canned)

1 can mixed vegetables, drained

1 can cream of chicken soup

1 box pie crust

Mix the cream of chicken soup, the vegetables and chicken. Place one part of the pie shell into a 2 quart baking dish. Fill with the chicken mix. Top with the second pie shell and seal edges. Cut a slit in top for ventilation and bake on 400 degrees until golden brown.

Bacon Chicken Cheese Sandwich

I love Bacon Chicken Cheese sandwiches. They are one of my go-to quick and easy weeknight meals when I have forgotten to lay anything out for supper. A whole wheat but, chicken breast, slices of bacon, slice of cheese, some lettuce and a slice of tomato….Ohhhh, I am drooling just thinking about it.

Bacon and Cheese.

Bacon, Cheese and Chicken!

You just can’t go wrong with that combination! I mean really, it’s better than finding a great deal on wholesale shoes. And you ALL know how much us women love shoes.

This is one of the favorites around here, I mean really, who wouldn’t love chicken smothered in tomatoes, bacon and cheese?

Ingredients:

4 boneless, skinless chicken breasts

6 slices bacon, cut into pieces

1 can diced tomatoes, drained

1 onion, chopped

1 TBSP minced garlic

1/2 tsp. salt

1/8 tsp. pepper

1-1/2 cups shredded cheese of choice, I used 5 cheese Italian

 

Directions:

Cook bacon and onions in a skillet until the onions are tender and the bacon is done. Pour bacon grease out of skillet, but don’t wash or wipe it.  Saute chicken breasts in the skillet over medium heat, turning once, until chicken is almost cooked and just barely pink in the middle. The internal temperature should be around 155 degrees F. This should take about 8-10 minutes. Place chicken in an 8 X 10 baking dish.

Place the bacon and onions back in skillet along with drained diced tomatoes, minced garlic, salt and pepper and cook on medium high for about 4-5 minutes. Spoon over the chicken breasts and then sprinkle with cheese. Bake at 350 degrees for 20-25 minutes or until chicken is thoroughly cooked.
