As a country girl that was born and raised in a small town, in the North Georgia Mountains that doesn’t even have a Walmart…I never really thought that I would be afforded some of the wonderful opportunities that I have been a part of. I mean really, who would have thought that someone from a place affectionately known as Hicktown would get to spend a day at Paula Deens house. Or go on a book tour with her dear friend. Or travel to Toronto Canada to be on a movie set and get to interview the actors. This list could go on and on and on.

During my travels and adventures I have met some wonderful people, and some of those wonderful folks I am honored to call friend. One of those is my dear dear friend Chef Lewis. The first time I ever met him we immediately hit it off and have stayed in contact ever since. Not only does he work at UNA, he does catering and he is my go to guy when I have an idea for a recipe and need some help on the execution of it. Cause you know, I am not a Chef, he is. I am just a cook. A cook for family and friends, that pretends like she knows what she is doing every once in a while. Chef Lewis comes with a package, he has the sweetest wife and the cutest baby. Little William smiles ALL the time. Look, here he decided to get in a fight with the coffee table, and just look at that smile!

Baby WilliamSo anyway, Chef Lewis and I were talking the other night and the subject of food came up (as usual). He started telling me about how he created this recipe by a complete accident and how fabulous it was. And, he was gracious enough to allow me to share it with all of you. So, I gathered up all the ingredients and traipsed over to my Mom’s house…she needed to have a dose of me, I could just tell. We got to work and had these babies knocked out in no time.

Now, I have personally never had Marzipan, so I can’t tell you what it tastes like, but I can tell you that these little bites of heaven are simple to make and you can’t eat just one.  Ok, so you can’t just eat 2 or 3 either. They are ADDICTIVE! My Mom who has tried Marzipan says these are MUCH, MUCH better! I was worried we might not have any left to photograph because we just couldn’t quit eating them.

Make the cake according to the directions on the package and bake it in a sheet pan.

Crumble it up real good.

Mix the cake, cream cheese and almond flavoring together until it forms a dough. Now, here is the thing with this step. I added 3 teaspoons of almond flavoring, but I do not like an over-whelming almond flavor, some people (like my Mom) love it. So, I suggest that once it is mixed pretty well that you taste it. If you feel like you want more of an almond flavor, add a little more, one teaspoon at a time.

REDNECK MARZIPAN

1 box Golden Butter Cake Mix (plus ingredients to make cake as directed)

1 – 8 ounce package of cream cheese, softened

3 teaspoons Almond Flavoring

Confectioners Sugar

 

Directions:

Prepare cake mix as directed on package and pour into a sheet pan. Bake at 350 degrees for approx 20 minutes or golden brown. Remember, the bake time will be less than the package recommends because of using the sheet cake pan.

Once the cake has cooled, break it into small pieces and crumble it with a fork. Mix the cake mix, cream cheese and almond flavoring until it forms a dough. We used a stand mixer but you can do this with your hands if you don’t have a stand mixer.

Take small pieces of the dough and roll into balls. Sprinkle with powdered sugar just before serving.

 So, why can’t I have them both at the same time?

There is no reason at all!

Seriously.

Just put the Cotton Candy IN the cake!

 And it’s easy to make! All you need is a Vanilla or French Vanilla Cake mix, the ingredients called for on the box and some cotton candy.

For the Marshmallow frosting you will need some Marshmallow Creme, butter, powdered sugar, vanilla flavoring and a little milk.

 Mix the cake according to the directions on the box. Then tear the cotton candy into pieces and add to the mix. Stir it lightly and you are done! I used pink and blue cotton candy because I just couldn’t decide on one. You can use one or the other, and that is ok. Also, there are no exact measurements for the right amount of cotton candy. I used about half of each tub, but if you want a little more or a little less, that totally works.

And people won’t believe that you made it with actual Cotton Candy!

Cotton Candy Cake with Marshmallow Frosting

Then I iced it with a Marshmallow Frosting.

It is good with or without the frosting.

Sinful. Sweet. Swirly.

Just the way cake should be!

Cotton Candy Cake

1 box Vanilla or French Vanilla Cake Mix

1-2 tubs of Cotton Candy

Make cake according to box directions. Once cake batter is mixed well, pull the cotton candy apart into pieces and stir into batter. Pour batter into a greased and floured pan and bake at 350 degrees for 38-40 minutes if using a bundt pan. If you are going to make a sheet cake or cake rounds, check suggested time on box.

After removing the cake from the oven allow to cool for 10 minutes and then remove from the pan. Allow it to finish cooling and then apply the frosting.

Marshmallow Frosting

10 oz. Marshmallow Creme (1 and a half of the standard size tubs)

1/2 stick butter or margarine, softened

1 1/2 teaspoon vanilla flavoring

16 oz powdered sugar

2 teaspoons milk

Mix everything together until well blended. Apply to cool cake.

A couple of years ago we got a new grocery store in Dalton. It was unlike any store we had ever heard of around these parts and was the hot topic for quite some time. I mean really, who had ever heard of a store that doesn’t have bags, doesn’t bag your groceries and you have to put a quarter in the cart in order to use it?? Seriously now, those kind of things are unheard of around here.

The first time I decided to venture into the new ALDI store I was prepared to not like the store at all. I only carried one bag because I just knew I wouldn’t buy much. I had my quarter in hand and mind made up. WOW, was I ever surprised. I ended up totally loving the store. We get great deals on milk, eggs, produce, etc on a regular basis. And the day I went in and got center cut bacon for .99 a pack you would have thought I had won the lottery. I bought all they had…Hehehe.

So anyway, I am now a regular at the ALDI. And when I was getting all of my ingredients together for the mass amount of candy making I do this time of year you can bet that is where I went.You just can’t beat the prices. Marshmallow Creme…for .79, SHUT THE FRONT DOOR!! Yeah, I bought a lot. We use it for a lot of different recipes and well heck, the cheapest I found it anywhere else was $1.00. Their Baker’s Corner brand is great!!

Marshmallow cremeSome of the other things I stocked up on: Butter, sugar, cream cheese, chocolate chips, butterscotch chips, corn syrup, peanuts, pecans, coconut flakes and the list goes on and on and on. Their butter…REAL butter was $1.99! I bought a lot of that too.

Then, I had to go back and restock on a few things I didn’t get enough of on the first trip.

AND, as is typical for me, I forgot my bags. That is my biggest downfall when I shop there, I am always forgetting my bags. What do you do when you forget your bags? Well, you grab an empty box of course.

As soon as I got home and got my treasures unloaded I quickly got to work on my newest addiction, PayDay Bar Bites. I can’t ever seem to make enough to satisfy us all. Good thing they are so easy to make! Here, let me show you just how easy:

PayDay Bar Bites

2-3 cups salted peanuts

2 & 1/2 tablespoons butter

2 cups peanut butter chips

14 ounces sweetened condensed milk

2  (7 oz) jars Marshmallow Creme

kosher salt

Place about 1 to 1 & 1/2 cups peanuts in the bottom of an ungreased 8 X 10 (or something about that size) baking dish. Melt the butter and peanut butter chips in a large saucepan over low heat and stir until it’s all melted and smooth. Remove from the heat and stir in condensed milk and marshmallow creme. Keep stirring until it is mixed well and smooth. Pour the mixture over the peanuts in baking dish. Sprinkle with the remaining 1 to 1 & 1/2 cups peanuts over top of the mixture. Sprinkle with a little kosher salt. Make sure not to use too much, just a little. Place in the refrigerate until chilled then, cut into bite size pieces.

WARNING!!! They are addictive!!!

Before you even ask…Yes, you can leave the salt out. But if you are here because you had them at my house and loved them…well, those I make always have salt on them. And it is always Kosher salt. And this is for that one person who is going to whine about having to go buy Kosher salt, just for this recipe…(yes, I know and you know who you are) Just buy the stuff. It isn’t expensive and it is worth it. Seriously. And you will love cooking with it. And you will love it as a table salt. It is a great all-around salt and what I buy almost exclusively. It makes a difference. Seriously. Now that we got that out of the way, let’s see what tips ALDI has to help save us time and money.

 

Holiday Entertaining Tips

The following tips were developed by food stylist, Janice Stahl, on behalf of ALDI.

Keep it Simple. When planning your holiday party or family dinner, don’t overthink it. Remember, “Less is More” when designing your menu and décor. If you try to do too much, you’ll end up unable to enjoy the event you’ve worked so hard to put together. Keep your shopping experience simple and stress free by shopping at ALDI. From award-winning wines and holiday baking essentials to gifts and all the trimmings for your holiday dinner, ALDI has everything you need at prices up to 50 percent* less than traditional grocers.

Somewhat Homemade. Combine traditional homemade recipes with pre-made items for a holiday spread that is sure to please. Dress up your Appleton Farms Spiral Sliced ½ Ham from ALDI with an apple cider and balsamic glaze. Or, if there are picky eaters on your guest list, set up a separate table for the kids, so you don’t have to display their kid foods right next to your gourmet recipes.

Candy Cane Cake

My Mom has made this cake every Christmas for as long as I can remember. Her Mom made this cake for as long as she could remember. And before that, my great-grandmother made it. I spent the day with my Mom recently and we made this cake just for you. I wish you were here to help eat it.

Ok, not sure who I am kidding, it is already gone. Yep, we ate it all. It couldn’t be helped. Once you taste this frosting, you will know exactly why. The peppermint makes it perfect for a Christmas party, a family get-together or as a holiday treat. When my Mom was growing up, they ate Sunday dinner at her Grandma Smith’s house every Sunday. I never had the pleasure of meeting my Great-Grandmother Smith but I have always heard she was one of the best cooks around. Mom tells me stories of all the great food she would cook and this cake was ALWAYS the treat on Sundays. The one difference was that she put roasted peanuts on it instead of peppermint candy, except at Christmas and then she used crushed up candy canes.

I always wondered why no one had ever seen my Mom make this cake. As we were in her kitchen I got to the bottom of the mystery. She never made it when any of us were around because then she would have had to share the bowl and beaters. Seriously, I now know I was deprived all these years. I could make a bowl of the frosting and just sit and eat the whole dang thing. I thought she and I were going to get into a knock down drag out…but we played nice and shared…mostly.

Gather up the ingredients (also need whatever the cake mix you choose calls for).

Make your cake according to the directions on the box. I like the French Vanilla but you can use yellow cake mix if you want.

After you get the cake in the oven, you need to crush up the candy canes. You can leave the a little chunky or crush them as fine as you choose. They do look better if there are more pieces than powder.

Once the cake comes out of the oven and is cooling you need to get ready to make the frosting. It calls for 4 egg whites and both Mom and I had seen a thing on Pinterest that said to use an empty water bottle to separate the yolks from the whites. We just had to try it. Coolest thing ever! You are going to love this little trick. Simply squeeze the water bottle in and place directly over the yolk and release. It sucks the yolk into the water bottle and leaves the whites!!

Domino Light Sugar and Stevia

The newest product from a brand you know and trust is Domino® Light, an all natural pure cane sugar & stevia blend with half the calories of sugar. My Mom’s always looks even and so pretty. Mine, well…while it isn’t the prettiest I have seen it still tastes fabulous!

French Vanilla Cake Mix, baked according to package directions

8-10 Candy Canes, crushed

1 2/3 cups Domino Light Sugar

1/4 teaspoon Cream of Tartar

4 egg whites

1/4 teaspoon salt

1/2 cup hot water

1 teaspoon Vanilla extract

Make cake layers and set out to cool. The cake needs to be cool when you frost it. Peel wrappers off of the candy canes, place in a storage bag and crush. We used a rolling pin but most anything will work.

Beat the egg whites until they form a peak. Add Domino Light Sugar, salt, cream of tartar and water to a saucepan (NOT to the egg whites). Boil, stirring constantly, until a drop will form a soft ball in cold water. Add the hot mixture to the egg whites and continue to beat with mixer at medium speed until the frosting is a smooth texture, it takes about 8-10 minutes. Add vanilla flavoring and beat two more minutes.
