Orange Glazed Carrots

This is a favorite side around here. We just love it beyond what words could describe. It is super easy to make and is also really quick for those nights when you need to throw something together for the family or to impress unexpected guests. I ALWAYS keep several cans of carrots on hand just for those times when I get a call at the last minute from someone inviting themselves to supper.

Yes, people invite themselves to supper at my house often. I am always asked…”Does that not bother you?”

No, it really doesn’t. There is always room for one more at my table. Always. I love nothing better than to spend time with friends and family…except being able to cook for them. So, let’s get to cooking!

Orange Glazed carrots ingredients

You will need 2 cans of sliced carrots, some butter, orange marmalade and just a dash of cinnamon. If you don’t feed the masses, or have a teenage boy living under your roof, both of which I do…you can cut this recipe in half to feed a normal amount of people. I am not sure what a normal amount of people for dinner is though, it has never happened here.

Melt the butter, orange marmalade and cinnamon over medium heat in a saucepan until it is melted. It will look like a sauce and smell wonderful. Just make sure to stir it often so it doesn’t burn.

Drain the carrots and then add them to the butter/orange marmalade mixture.

Simmer, stirring often until the carrots are heated through and glazed with the sauce.

Serve while hot.

This will be enough to feed 6-8 people, depending upon the appetites of the people that you feed.

Orange Glazed Carrots

2 (15 oz.) cans sliced carrots

2 Tablespoons butter

4 Tablespoons Orange Marmalade

Dash of Cinnamon

Mix the butter, orange marmalade and cinnamon in a saucepan. Heat over medium heat until it all melts and becomes a sauce, stir often. Add the carrots and heat until the carrots are hot and glazed.

Serve immediately.

Onion and Herb Roasted Potatoes

We love potatoes. Of Any Kind. But these, ohhhh, these potatoes…they are a big favorite in this house!

This is one of those simple, easy to make recipes that requires few ingredients, is economical yet packs a punch of flavor that you won’t soon forget! Another great thing about this recipe is that it is easy to double if you feed a crowd like I do.

All you need are some potatoes, dry onion soup mix, Italian seasoning and olive oil.

Wash and peel the potatoes, then cut into chunks.

Add the olive oil, dry onion soup mix and mix well.

Then I top with the Italian seasoning and mix it in…you can do this with the other ingredients but I never measure the amount of Italian seasonings that I use, I just add until it looks right to me. If you are one of those folks that needs exact measurements though, I would guess I use about 1-2 Tablespoons.

Bake on 400 degrees for 1 hour.

Onion and Herb Roasted Potatoes

2 pounds of potatoes

1 package dry onion soup mix

1/3 cup olive oil

Italian Seasoning

Wash and peel the potatoes and cut into chunks. Place the potatoes in a 9 X 13 baking dish, top with olive oil, dry onion soup mix and Italian seasoning. Mix well, Bake on 400 degrees for 45 minutes to 1 hour. Just check the potatoes to see if they are fork tender to make sure they are done.

I always double this recipe, so if you need to feed a larger crowd it is easy to double and the cooking time only increases by about 15 minutes.

There aren’t many great deals that I will be after this week. As a matter of fact, there are only a couple, make sure to check your favorite couponing site though, there are some things that are ok deals, if you need that item. If you don’t have a favorite couponing site I suggest that you check out SouthernSavers.com.  Yes, I go to multiple stores. When there is a good stock up price I buy as many of those items as I have coupons for. Before you go to the store KNOW that stores coupon policy. If they are out of an item make sure to get a raincheck. There are many, many tips out there for couponing, but the biggest is with a little organization and pre-planning you can get some really good deals.

Hawaiian Luau Sliders

Let’s Luau!!

These little sandwiches are PACKED with flavor and will leave you wondering why in the heck you have waited so long to make them. Burgers, Hawaiian Rolls, Caramelized Onions and Peppers, sliced Avocado, freshly made guacamole, lettuce tomato and cheese. Yummmmmm!!!

mix ground beef and Grill Mates Seasoning

First we need to season the ground beef. Take 1-2 pounds of ground beef and add in one packet of McCormick Grill Mates Hawaiian Luau Seasoning blend. Mix well.

I then roll my meat out and use an old-fashioned biscuit cutter to cut my patties out. That way they are all perfectly round and uniform in size…but you can just pat them out if you want, either way will work just fine.

fry or grill the burgers

Place in a pan, on medium heat and brown each side of the patties, because these are mini-sized, it doesn’t take very long. If you choose to you can also throw them on the grill.

Next, I throw my red pepper sliced and onion slices in a pan with about a tablespoon of olive oil and let them caramelize. I cut my slices very thin, remember…we are making mini-burgers and if you slice them too thick they just take over, you want all the flavors to meld, not dominate.

These are the toppings that we like to use. Lettuce, Tomato, Swiss Cheese and fresh sliced Avocado.
