Breakfast is known to be the most important meal of the day, but for me it is also the hardest. I am one of those weird folks that can only eat “breakfast” food for breakfast. My kids and husband can eat anything. If it gets to be lunch time and I haven’t eaten breakfast, I still have to have breakfast type food before I can eat anything else. I usually have oatmeal, a sausage biscuit, pancakes, or something along those lines. When I heard about belVita Breakfast Biscuits I was intrigued.

belVita Breakfast Biscuits aren’t biscuits in the traditional “southern” sense. They are more like a cookie/cracker. They are however delicious! Once I opened the package I was prepared to be disappointed because of the difference in what I consider a biscuit and what they consider a biscuit, but I was pleasantly surprised and found out that I really liked them… A LOT! They come in 3 flavors: Golden Oat, Blueberry and Apple Cinnamon. Pair a pack with some yogurt and a piece of fruit and you have a very nutritious breakfast to help you through the day. You see, belVita Breakfast Biscuits are specially baked to release energy regularly and continuously in your body—which means you have nutritious sustained energy that lasts all morning. And I really have had more energy. One of the other things I have found is that when I eat belVita biscuits in the morning I am less hungry throughout the day. And, I have also found that they make a great afternoon snack to help me get through the rest of my day.

Each individual package of 4 biscuits is portioned for part of a balanced breakfast. A 50 gram serving contains 18–20 grams of whole grain carbohydrates, 3 grams of dietary fiber, 3–4 grams of protein, and a good source of four B vitamins and iron. belVita Breakfast Biscuits also contain no high-fructose corn syrup, no partially hydrogenated oils (0 grams of trans fat per labeled serving), and no artificial flavors or sweeteners.

Where can you find belVita Breakfast Biscuits? I know they are at retailers nationwide. I have personally seen them at Walmart and Bi-Lo. Of course ya’ll know here locally we don’t have a lot of stores to choose from but our local grocer carries them so I am sure yours will too. And if they don’t, request that they order them. I have made sure to stock up…mine seem to keep disappearing. Ok, so I have been sharing with friends and family that drop by. And Tate seems to be really enjoying them. And Bric likes to take them for his breakfast when he is going to be on the road. And I can’t seem to stay out of them either.

You heard me right, Ice Cream Rolls! OhMyStinkinHeck, are these ever De-Licious!!! And while they are baking, you just aren’t going to believe how good your house smells. The fact that they are easier than any rolls I have ever made is just a bonus.

They are light, fluffy, taste great and can go with any meal.

Ice Cream Rolls

2 cups of softened Vanilla Ice Cream (it needs to be really soft, not quiet melted and still cold) **See note below

2 cups Self-Rising Flour

Mix the 2 ingredients together. Grease muffin tins REALLY well and fill half way. Bake on 400 degrees until lightly brown.

SERIOUSLY, that is all there is to these little bits of heaven. I told you they were super easy! And while I know it sounds weird, you are going to love how they taste. And smell. And your family is going to think you are even more impressive than receiving an unexpected xbox live subscription! I think Tate ate like 6 of these at one meal.

** You can also use other flavors of ice cream! The Oreo Cookie Ice Cream makes a great dessert. Butter Pecan and Strawberry makes for a great treat at breakfast time. Just get creative and use what ever flavor your family likes!

Mustard holds a special place in my heart.

It is my FAVORITE condiment.

Shhh, don’t tell but I hate mayonnaise so when I make a sandwich, mine always has mustard on it. And it has to be French’s. Ohhhh my tangy friend how I love thee.

It is also an integral part of my all time favorite breakfast:

My friend Christy and I were on a road trip when she first discovered just how delicious it is. She thought I was insane when I told her to ask for mustard the first morning I ordered a sausage biscuit. Then she tried it and got hooked for life.

Honey Mustard, great on chicken nuggets. Spicy brown mustard, perfect with corned beef. Dijon Mustard, fabulous on baked chicken.

So, what is YOUR favorite way to use mustard?

Mother’s Day is approaching quickly. I have a great gift for my Mother. I have actually had it for about 3 months. Now, I am working on the Brunch. I would fix her breakfast in bed, but then I would have to get up before the crack of dawn…and have all the food ready. So, she will get brunch, that is much more in my time frame. I have been playing around with a few recipes especially for the occasion. We all love the Cranberry Raisinets that Nestle launched in July 2009. Now, here is the kicker…they are fabulous to cook with! I have made muffins with Cranberry Raisinets. I have made waffles with Cranberry Raisinets. And I have made biscuits. Yep, biscuits:

Simply take 2 cups of flour

Approximately 1/3 cup of shortening.

Cut the shortening into the flour using a fork or one of the specialty tools made for that purpose. I don’t have one of those so I have always used a fork.

Then add your milk. You can use sweet milk or buttermilk, which ever you prefer. And I never measure but I would guess it is around 2/3 or 3/4 of a cup.

Mix your ingredients together forming a loose dough.

Add in your Cranberry Raisinets. I used 1/2 the bag. You can use more or less depending on how saturated you wish for your dough to be.And I don’t have a picture of this because I had dough all over my hands.

Form your dough into biscuit shapes and there you have it…your Cranberry Raisinet Biscuits.

Bake at 425 degrees until golden brown.

Yummm.  I love these. Cranberries and Chocolate in biscuits. Life just can’t get better than that!

These were really easy to make. Meaning that your kids can help and depending on their age can probably make them all by themselves and they have turned out to be a huge hit with everyone. I like mine as is or cut open with a little butter inside. Tate liked his with some Orange Marmalade inside. Erin and Bric both preferred theirs as is hot out of the oven.
