And just so you know…the 50 pounds I would gain would be totally worth it.

I love lemon desserts and I love pound cake, combine the two and I am in heaven. Which is why I don't make this cake very often. I find myself snatching a piece every time I walk through the kitchen and then I get sick from eating so much. It is like a drug, one you just can't get enough of. Bric is just as bad. We seriously might as well cut the cake in half and dig in because we know that is eventually what is going to happen anyway. Guess it just makes us feel better to take a little at a time.

 Anyway, as good as it is, you would think you have to spend hours making it. It is really easy though. You need some sugar, sour cream, a white cake mix, vegetable oil, lemon extract and eggs.

 Mix all the ingredients together. Your batter will be pretty thick, that is normal. And the way you want it to be.

 Grease and flour your pan.

Please use shortening to grease your pan. If you use oil or spray your cake will stick.

Trust me on this.

Then pour your batter into the pan.

 Bake at 325 degrees for 45 minutes to an hour.

Make a glaze out of powdered sugar and half and half, then top with the glaze.

And you have a gorgeous cake that you aren't going to be able to stay out of. If you make it for company I suggest putting it right where you will know where it is. That way you will actually forget where you put it and be able to stay out of it. At least that is the way it goes in my house anytime I put something where I just know I will be able to find it. I am currently looking for an iTunes gift card that has been lost for a few months now. I distinctly remember telling myself that if I put it “right here” I will remember exactly where it was. Ahhh, the joys of aging.

LEMON POUND CAKE

1 box white cake mix

8 ounces sour cream

1/2 cup sugar

3/4 cup oil

4 eggs

2 tsp Lemon extract

Mix all the ingredients together, adding the eggs one at a time. Grease and flour a bundt pan, then pour batter in. Bake on 325 degrees for 45 minutes to one hour. Let cool completely and then glaze.

GLAZE

2 cups powdered sugar

3-4 tablespoons half and half

Place powdered sugar in a bowl, adding one tablespoon of half and half at a time, mix together really well. You want it to be really thick, then I heat it for about 20-30 seconds in the microwave to make it more “pourable”. Once it cools on the cake it will be thick and pretty.

You can use regular milk, we just prefer using half and half because it gives it a little more depth. You can also use a little more liquid if you prefer your glaze to be thinner. Again, it is our preference for it to be thicker. It just looks prettier to me and it stays better.

Fried Stuffing Balls

 

 

Southern Fried Stuffing Balls – It just doesn’t get much better than this! This is the one thing that we all hope shows up on the table at Thanksgiving. More than any other dish. Seriously. They are a staple at our meal…but they never make it to meal time. Everytime someone walks by they have to grab a few, then as they go back by, a few more. It is always so sad when they have all disappeared and the only thought you have is “But I wanted one more”.

We never, ever make enough. Ever.

Here in the South so many of our traditions and memories revolve around food. I am thankful for each and every one. That might have a little to do with just how much I like good food…but I also relish in fond memories of loved ones and the precious times we have had together. With Thanksgiving just around the corner, these are at the front of my mind and I wanted to share the recipe with you so that you can enjoy them as much as we do!

I highly recommend that you not discount this recipe. These little babies are heaven to your taste buds. I mean really: sausage, stuffing, and fried. There just isn’t much better.

These are all the ingredients that you will need other than water and butter. Here, let me show you what’s involved:

 

8 ounces of spicy sausage (can use mild if you like)

Canola Oil (can use Vegetable oil)

1 cup all-purpose flour

1 box of chicken flavored stuffing mix

1 tablespoon of parsley (optional)

1 tablespoon of thyme (optional)

mix stuffing according to directions

Make your stuffing mix according to the directions on the package. That way it can be cooling. And, if you want a little extra seasoning add the parsley and thyme to it. Sometimes I do, sometimes I don’t. It is really just a personal taste thing.

roll sausage into little balls and fry

Now pour some oil to a depth of about 1/4 of an inch in a large skillet and heat while you roll your sausage into small balls. Once the oil is heated, cook your sausage balls on medium heat until golden brown.  Remove from the pan and place in a bowl with a paper towel to drain.

Now that you have your sausage browned and drained, you want to encase each sausage ball in stuffing and set aside on a plate.  You will then roll each one in the all-purpose flour.

fry for about 3 minutes

Meanwhile you want your canola oil to be heating in a large skillet to about 350 degrees.  Once your oil is thoroughly heated you will carefully drop each of your sausage stuffing balls into the oil and cook for about 3 minutes or until golden brown.

 

Then, place the cooked sausage stuffing balls back into your bowl for serving.I hope you enjoy these as much as we do…just don’t tell my family when you are making them. We might just all show up on your doorstep!

There are so many things to consider when looking at flooring options. Where to even start?? One of the big considerations in our house is price. Price of the flooring, materials needed to install the flooring, do we need to hire someone to install the flooring? It can really add up quickly!

One of the BEST flooring options we have found…Carpet Tiles. Ohhh my, I love them. They are easy to install, so easy in fact that even I can do it. They are affordable. No crazy tools needed to install it. They are easy to maintain and clean. And they are DURABLE! We visited Carpet Bargains, made our selections and got started. Since Carpet Bargains is local to me we were able to go in and see the selection in person before making our final decisions. But if you are’t local and would like to see and feel what a particular color looks like you can order samples and their customer service is SUPERB. They will help you make a choice that is right for the area you want it to go in. They have tiles for both residential and commercial buildings and they have different backing options…even some that are peel and stick.

Look at that backing! That means, no ruined and stinky padding. That means spills are easy to mop up. That means that if you clean spills up in a reasonable time it won’t ruin your sub-floor!

There are so many advantages that I have found to carpet tiles, all of which were HUGE pluses to us. Carpet tiles comes in MANY, MANY different styles and colors, making it easy to find something that will go with your decor and the feel of your home. I chose a darker color because we have a lot of traffic through here, we have 3 dogs and we have teens. While the carpet tiles are super easy to clean and most spills will not stain…I didn’t want to have to vacuum every day. You Mom’s know what I am talking about…you get that dreaded call from a friend in the area that would just love to drop by and see you…Oh, and they are going to be there in 5 minutes. That means all the dirty dishes go in the oven, the dirty clothes stashed in the closet and all the clutter and toys go under the bed, air freshener sprayed and there is no time to sweep or vacuum. Oh PLEASE, don’t give me that look, we have all been there. And I seem to find myself there quite often. So, I chose something darker, so if I have company showing up I could get away without trying to vacuum a whole room in 60 seconds flat.

Since it’s inception over 25 years ago, carpet tile has been the flooring of choice for extreme high traffic areas, such as airports, restaurants, hospitals, etc. Carpet tiles will outwear conventional carpet at least 2 to 1! And that folks is how it stole my heart.

In addition to being extremely durable, carpet tiles offer the distinct advantage of easy spot replacement. If an area is damaged, simply lift out the damaged carpet tile and trade it with an extra one left over from installation or one from a less obvious place – under a desk, sofa, or other less visible area. Check out my video later in the post to see just how easy they are to clean and replace…but lets talk about the ease of installation first.

To install carpet tiles you simply have to remove the old flooring. Making sure to pull up any staples, tacks, etc.

floor prepOnce that is done, clean the sub-flooring very well. All of the dust and debris has to be gone. If there are any pits or uneven surfaces you are going to want to fill with putty and let dry completely or if they are raised you will need to sand them down.

installationPick your starting point…and get started. We contemplated doing a basket weave style before I saw this particular pattern. If we had stuck with our original choice we would have needed to start in the middle of the room and worked out. But because of the style we chose as our final pick we could start on one side. Another great plus to these are that the seams don’t show once they are all in and have been walked on a little, or vacuumed.

glue downTo keep the tiles in place we are using the glue that was recommended by the manufacturer. It is a spray on adhesive and super easy to use. Spray a little in each of the 4 corners and a dot in the middle and simply stick the tile where it needs to go. Seriously!! I told you it was easy! The back even has arrows so you will know which way to place the tile so that the pattern all runs the same way. It is really hard to mess this up.

When you get to the opposite edge of where you started, you may need to cut some pieces to fit. All you will need for that is a straight edge ruler and a utility knife.

And…you are done! We got completely finished in ONE day. That was moving the furniture out, removing the old carpet, prepping the floor, installing the new carpet tiles and placing the furniture back in the room.We didn’t have to pay anyone to install it. We didn’t have to buy special tools.

Now, what happens if you spill something? Or need to replace a tile? Well, let me show you how easy and quick it is to clean or make repairs:

Please note that we used straight bleach in the video. The manufacturer does not recommend using straight bleach but a 10 to 20 percent bleach solution to clean with. That will be more than sufficient to get out most stains. I just wanted to show that if an accident with bleach happens, so long as you get it up your tiles should be ok. I love Pumpkin Rolls. I could seriously eat a whole one by myself. The problem is that Erin is always the one that made them around here. Yeah, I could make them but I am lazy, I want someone else to do it. So since Erin got married and moved off to Texas it doesn’t look like we are having Pumpkin Roll anytime soon around here.

Since the arrival of Fall I have been sitting around wistfully thinking of Pumpkin Rolls, wishing Erin was here to make me one and watching Chuka destroy my throw pillow…

…I got to thinking that there had to be a way to make a similar something without the fuss. While this isn’t exactly a pumpkin roll, it is a great pumpkin cake and will satisfy that craving. And is much, much easier to make.

ingredients

You need a can of pumpkin, a box of white cake mix and a tub of cream cheese frosting. Mix the whole can of pumpkin, the white cake mix, one egg, 2 Tablespoons of oil and 1/4 cup of water together. Pour into pan of your choice. I used loaf pans but you could use a 9 X 13 or a bundt pan or even round pans. Bake on 350 degrees until a toothpick comes out clean. It takes about 30 minutes or so, depending on your pan.

Set the cake out to cool. This is the hardest part.

Top with cream cheese frosting.

Ohhh goodness, this is so good. I even had it for breakfast this morning!
