Saucin’ It Up (GIVEAWAY)
February 15th, 2010When I went to Blissdom a couple of weeks ago I took 50 pounds of shredded pork BBQ with me.
NO, I wasn’t going to eat it by myself. Can’t believe ya’ll thought that! It was for the Country Party!

Anyway, Country Bobs sent all of the sauce to go on the meat. And OhMyStinkinHeck it was delicious. I may have cooked the meat, but the sauce made it! Country Bobs also sent each attendee to the party a bottle of sauce to take home and a coupon for a free bottle.
If you aren’t familiar with Country Bobs sauce, you need to get familiar. It is so good. They have BBQ sauce, an all-purpose sauce, a hot-n-spicy sauce and a seasoning rub. And their sauces are good on all types of meat. My whole family loves the sauce and since I had a few coupons left from the party, I would introduce your family to the sauce. So, I am going to have 5 winners, each will receive 2 coupons for a free bottle of sauce.

Peking Roast
August 16th, 20095 lbs roast beef (3-5 lbs.) any cut will do
garlic, slivers
onion, slivers
1 cup cider vinegar (or white vinegar)
2 cups strong brewed coffee
2 cups water
salt and pepper
With a sharp knife, cut slits all the way through the roast and insert slivers of onions and garlic.
Put the meat into a bowl and slowly pour the vinegar over it so that it runs down the sides into the slits.
Cover with plastic wrap and refrigerate for 24-48 hours.
When ready to cook, pour the vinegar off.
Place the meat in a heavy dutch oven and brown in oil until very dark on all sides.
Pour the 2 cups of brewed coffee over the meat and then add 2 cups of water.
Cover and cook slowly for approximately 6 hours on top of the stove.
You may need to add more water at some point, so check it once in a while and add only a small amount of water at a time.
Season well, but do not add the salt and pepper until about 20 minutes before serving.
This was the most tender roast I have ever cooked. It just falls apart on you.

Rib-roaring

Place your ribs on a rack

Rub em down! (HERE is my rub recipe, for ribs I always add about a cup of brown sugar to my recipe)

Coat them really well so that it will make a really nice crust.

Bake on 350 degrees for about 45 minutes.

If you are Tate you will drown them in sauce.

And if you are Tate you will need a gazillion napkins.
You don’t always have to have a grill to enjoy some really great ribs. This is one of our favorite foods and you can eat them with just the crusty deliciousness that a rub will make or you can add sauce for a fabulous treat.
Tiny Tacos
May 8th, 2009These are so fun for a simple light meal or as an appetizer at a party. Every kid and adult I have ever fed these to loves them!
Tostito Scoops
Finely shredded lettuce
Finely chopped tomatoes
Finely shredded cheese (I use mexican blend)
Taco Seasoning
1 lb. Ground Beef
Mild, Medium Or Hot Taco Sauce (depending on your taste)
Arrange the scoops on a platter. Mix the lettuce, the tomatoes and the cheese in a bowl until well combined.
Place about 1 1/2 tsps into each scoop. Brown the ground beef with the taco seasoning as seasoning packet instructs. Use a spoon to make sure the ground beef is crumbled in fine pieces as you cook it. Once the meat is browned place about 1 tsp atop each scoop.
Then apply as much sauce as you like atop each scoop. You can put a little sour cream atop as well if desired.
Beef Tips and Rice
May 5th, 2009Easy Beef Tips and Rice!
Ingredients:
•1 pound beef tips (stew meat works well too)
•1 medium onion, diced
•salt and Pepper to taste
•water or beef broth to cover
•a few tablespoons of cornstarch or flour mixed with a little cold water to make a smooth paste
•hot cooked rice (I used Jasmine Rice YUMMM!)
Brown the beef and onions together; add salt and pepper. Cover with water or beef broth. Cover and simmer over low heat for 4 hours, or until meat is fork tender (works great in crockpot!). Thicken with cornstarch or flour mixed with water. Serve over rice .
You can also add bell pepper and muchrooms if you choose. Very easy to prepare and throw in the crockpot on those days that you know you are going to have a busy day but want to feed your family a good meal. We had this last night…quick, easy, delicious! Can’t ask for much better than that.
