In the past when we have done loaded potatoes it has been the typical butter, sour cream, bacon, chives and BBQ meat. So when I was getting ready for dinner the other night I thought “Hmmm, how can I change this up a little?”

As I was browsing to see what sounded good I found a package of Hillshire Farms Beef Smoked Sausage and thought “What the heck!”

Makes for a easy, delicious and filling meal in itself. AND, it is BUDGET Friendly!! I can often find the Hillshire Farm products on a good sale and paired with coupons can get it at a really good price. Total cost for this meal for 4, less than $4. That is under $1 per person!!

Ingredients:

Potatoes, baked

butter

sour cream

2 onions

Hillshire Farms Beef Smoked Sausage

shredded cheese

 

Directions:

Bake your potatoes (I bake mine on 450 for one hour). While your potatoes are baking slice 2 onions into thin slivers. Chop the sausage into small cubes. In a skillet on medium heat saute the onions and sausage until the onions are caramelized.

Cut a potato in half, add sour cream and butter as desired, top with caramelized onions and beef smoked sausage mix then add some shredded cheese to the top.

I think you will really like this. It was a huge hit around here and will definitely be a regularly scheduled meal.
