We love Cabbage around here just about every way it can be cooked. And let me tell ya, we have tried it a bunch of different ways. We have 2 absolute favorites. One is fried cabbage and the other is Creole Cabbage. There are lots of different ways to make Creole Cabbage. Some people add ground beef, some add sausage and that is great if you want to make it for a complete meal, but we like it as a side.

CREOLE CABBAGE
5 cups chopped cabbage
1 large onion, chopped
1 teaspoon minced garlic
1 green pepper, chopped
2 tablespoons butter or margarine
1 can Ro*Tel tomatoes with green chilies (the original)
1 teaspoon sugar
black pepper to taste
1 cup sharp shredded cheddar cheese
Cook the cabbage in water over medium-high heat for 10 minutes. Drain well. Saute the onions, garlic and pepper in a large skillet in the margarine or butter. Add the Ro*Tel, juice and all, the sugar and black pepper and let it cook for about 5 minutes. Combine everything and place in a baking dish, cover the top with the shredded cheese. Bake at 325 degrees for 20 minutes.

This also makes a great dish to carry to pot-lucks, reunions, etc. because you can easily double it.
