On Friday night we had Black Beans and Rice for supper. And when I make Black Beans and Rice I have to make a TON of Pico de Gallo and usually it never seems to be enough. But amazingly we had some left over on Friday so I decided on Saturday to have grilled chicken with mozzarella cheese and pico de gallo on top. Oh My Word, that was the BEST chicken I have had in a long time. I am talking amazing! And it was so simple.

We also had lots of fresh vegetables to pair with the chicken from our most recent trip to the Mennonite village. They have the best produce. So our meal last night was all about fresh tastes and deliciousness beyond words.
To make the chicken all I did was coat each piece individually with some olive oil then add a little pepper and Supreme Seasoning from Benson’s Gourmet Seasoning line. We grilled it and then at the very end I sliced some fresh mozzarella cheese and melted it on top. Once plated I added the pico de gallo.
The vegetable mix is just some yukon golds, carrots, onions, squash and zuchinni cut up, sprinkled with a little olive oil, seasoning salt and garlic. I put them in an aluminum pan covered with foil and cooked them on the grill as well but you can easily do so in the oven. We have used a couple of ice cubes in leiu of oil if you are trying to watch your diet a little more closely.
Go ahead and get ya a diet pill ready. You are going to need it after tomorrows post. We are going to be delving into the sweet side of life for several days.
