Today is the prom. So I bet you can just imagine what I get to go through. I will be busy most of the day. Nail appt, hair appt, etc, etc. When she FINALLY gets out the door this evening I will post a picture. Till then, make these for me. I will eat vicariously through you. They are a comfort food. They would soothe my nerves, cause I know they will be rattled. Cause if any of you know Erin personally…she is going to be biting my head off at every corner. That is what she does when she is nervous. Add in excitement and oh my word…it is going to be one of those days.
I could eat like a gazillion of these! And, did you know that the sweet potato is one of the best vegetables out there for you? I hear it is packed with all kinds of vitamins and nutrients and what not. But, me, I like these because they are SOOO good!
2 Medium sweet potatoes, peeled
2 TBSP olive oil
2 TBSP brown sugar
Kosher Salt (about a 1/2 tsp)
Black Pepper (about 1/4 tsp)
Cinnamon (about 1/2-1 tsp)
Preheat the oven to 450 degrees. Cut the sweet potatoes in half and then slice into spears. Place on a baking sheet and toss with olive oil. Spread the potatoes out into a single layer. Mix your brown sugar, salt, pepper and cinnamon. Sprinkle the mix onto the potatoes. Bake them for 15 minutes, then turn them with a spatula and bake em for another 5-10 minutes. I sprinkle them with just a little more salt. Serve em while their hot!

MMmmm those sound so good. I have never had them that way. I have had them deep fried just like regular french fries….will have to try it this way…
I make something like these but they don’t have the sweetness. Sounds good.

This recipe sounds yummy! For my sweet pot. fries, I replace the brown sugar & cinnamon with garlic salt and a dash of cayenne pepper. Gives ‘em a little kick! Yum!
Next time (if you do) you fry french fries in place of one irish potato add one sweet potato…the combination ie great! Hope all goes well with prom!
