This is a twist on your typical spaghetti and meatballs. It is easy. It is inexpensive. And it is good. A great combination of things to make a weeknight meal.

8 oz. spaghetti noodles, cooked and drained

24 frozen meatballs, halved and thawed

1 (15 oz) jar pizza sauce

2 cups frozen Pepper Stir Fry, thawed and drained

1 1/4 cups Italian 5-cheese shredded cheese blend, divided

1 tsp dried basil

1/4 tsp black pepper

5 eggs

Preheat the oven to 375 degrees. Coat a 10″ nonstick ovenproof skillet (cast iron works great) with cooking spray. In a large bowl combine the noodles, the meatballs, sauce, the stir fry veggies, 1 cup of the shredded cheese, basil and pepper. Beat your 5 eggs and mix in. Spread the mixture into your pan. Coat a sheep of aluminum foil with cooking spray and cover the skillet coated side down. Bake until the center is set (about 25-30 minutes). Remove the foil. Sprinkle with 1/4 cup of the shredded cheese and bake until the cheese is melted.
