I love to make escarole and bean soup. I simply saute garlic in olive oil, add a can of rinsed, drained white beans, and let is simmer a little bit. I put chicken broth into a pot, and add two big heads of cleaned and torn escarole. Cook it down, add the beans, and you have a wonderful easy, delicious and cheap meal.

Mine is really simple - I use broth in recipes and sides that call for water!
Like in Stove top stuffing mixes… instead of water I add the same amount of broth, same thing with rice-a-roni! Gives those side dishes a real burst of flavor!

I don’t know what this is called; I call it chicken with olives and raisins. I read the recipe a while back, and memorized the ingredients — sorry I don’t have exact amounts or times:
Sautee 1/2 large, or 1 medium diced onion till barely translucent, then add diced boneless chicken that’s been dipped in a little flour. Sautee both until the chicken has some browned areas, and there’s browned stuff on the bottom of the pan.
Add a good amount of broth, about 1/2 inch, and use wooden spoon to scrape browned stuff off bottom of pan. Add about 1/2 cup each of diced green olives and raisins.
Cook over medium heat about 15-20 minutes, so the sauce thickens a little, and the chicken is cooked through. Add salt if needed. I usually serve this over rice, but pasta would be fine too.
