Yes, terrible picture I know. They all either came out too light or too dark.

I seriously need a photography class.

OATMEAL CAKE

1 cup oatmeal

1 stick margarine

1 1/4 cups boiling water

(place above ingredients in a bowl for 20 minutes)

1 cup light brown sugar

1 cup white sugar

2 eggs

1 tsp cinnamon

1 teaspoon soda

1/2 teaspoon salt

1 1/2 cups plain flour

(the recipe just says to bake for about 40 minutes. It does not have a temp. so, I would guess around 350)

Topping For Cake

1 stick margarine

1 cup brown sugar

1 cup coconut

1 cup pecans

1/4 cup sweet milk

Melt the margarine and add the other ingredients. Spread over the cake while cake is still warm. Place under the broiler until it starts to bubble and turns golden brown.

  1. A must try for me. I like oatmeal. Mother made us eat it every morning when I was a kid.
