I am so sorry. I really am. I just couldn’t help it. This is my Dad’s recipe. He loved to make Divinity, but he couldn’t write worth a crap. But, I couldn’t post the recipe without showing you that it was his, in his writing. I know you probably can’t read it…and I just hope I can interpret it all (cause I really can’t read it either). I do treasure it though…cause I will never have anymore of his recipes other than what I have.
I treasure all of the recipes I have from people that are in their handwriting, no matter how hard they are to read. If you love to cook…I highly recommend that you ask your loved ones to write down some of your favorites, in their handwriting, and save them. You will treasure them one day.
DIVINITY
2 1/2 cups sugar
1/2 cup water
1/2 cup light syrup
1/4 tsp salt
Bring to a boil till it will form a hard ball when dropped in cold water
Beat 2 egg whites till stiff
Slowly beat the mixture into the egg whites. Add 1 tsp vanilla. Spoon onto waxed paper and place a pecan on top.
Every time I use this recipe I think of my Dad and all the time he spent in the kitchen. I hope that if you make this delightful candy it will put a smile on your face as well. Enjoy!

Hi Penny, it is called Potato candy and it sure is posted, one of my favorites!!
Thanks so much, can’t wait to make it.
My mom also made a candy out of potatoes with peanut butter. She’d make the dough, roll it out, cover with peanut butter and roll it up like a pinwheel and slice. Does anybody remember that candy and, if so, do you have the recipe? Thanks.
I remember my mama wore her arm out in the kitchen making Divinity, stirring and stirring and stirring and stirring, working it to the right stiffness, and me jumping around, hurry up mama, what’s taking soooooooo long? I loved my mama’s Divinity. Haven’t found any since that I like. Will have to try your dad’s recipe. Thanks for sharing.
This is my dad’s fav too- made it for him once with my Gma who is now gone, may have to try this
What wonderful treasures you have in all these recipes…
I think your Dad’s handwriting is readable. It is nice you treasure it so.
On the other hand, everytime I ask my mom for a favorite childhood recipe she hands me an old worn magazine clipping
