First and foremost…I hate fruitcake. Except this one. I have always loved knowing this cake would be in the ice box waiting on us to arrive at Grandma’s house. It is gooey and rich…but oh so good. So, even if you are not a fan of fruitcake…you should really give this one a try. You will be pleasantly surprised.

ICE BOX FRUIT CAKE

1pound graham crackers (crushed)

1 pound marshmallows

1 pound mixed nuts

2 cups light cream

1 pound seedless raisins

10 or 20 cherries (the bottled ones)

First put the graham cracker crumbs in a mixing bowl. Put the cream in a sauce pan on the stove and warm enough to melt the chipped up marshmallows, then pour over the crackers and mix like a dough. When it is mixed good add in the raisins, nuts and cherries. Mix well and then pack into a pan or a bowl lined with heavy wax paper. Refrigerate for at least 8-12 hours.

Now some notes from me: My Grandmother always packed it into a bundt pan. I have also found that it works a little better if you spray some cooking spray on the wax paper as well. And don’t try to cheat on the refrigerator time…it doesn’t work.

  1. I love Ice Box Fruit Cake, and most of the family who normally don’t say this is really good. My mother use to make them for me each Chirstmas season, so it brings back a lot of childhood memories.

  2. can i add pineapples and if so what would you recomend crushed or tidbits and im assuming drained well. ive never made fruit cake but sooo love it , please give me any elementary tips you have
