Remember me telling you about all the tomatoes a friend blessed me with? Well, I have had to find ways to eat them before they go bad. I love tomatoes and have been eating the hound out of them (so much so that I am going to have to get me some acne treatment. They make my face break out when I eat lots of them). But I really wanted something a little different. Here is what I did:

Ingredients:
* 2 tablespoons bacon drippings or butter
* 1/3 cup chopped onion
* 8 ounces fresh chopped spinach
* 1/2 cup sour cream
* 3 slices bacon, fried and crumbled
* a few dashes Tabasco sauce
* 4 medium firm ripe tomatoes
* salt, to taste
* 1/2 cup shredded Mozzarella cheese

Directions:
In a skillet, cook the onions in the bacon drippings or butter until tender. Stir in spinach; cover and continue to cook for about 4 minutes, until tender. Remove from heat and stir in sour cream, bacon, and Tabasco sauce.

Cut off tops of tomatoes; scoop out centers, leaving shell intact. Sprinkle tomato shells lightly with salt and fill with spinach mixture. Place tomatoes in a lightly greased baking dish; bake at 375° for 20 minutes. Top each tomato with Mozzarella cheese and continue baking just until cheese is melted.

If you have an abundance of tomatoes right now and are wondering what to do with them…you should try these. If you don’t have an abundance, you should go out and buy some so you can make these. They are Yummylicious!!!!
