…your left over pot roast? Normally I make French Dip sandwiches. But, I recently found this recipe for Cheesesteak-style Sandwiches that uses left over pot roast and we loved it! So, I thought I would share it with all of you.

1 med. onion, sliced
1 sm. red bell pepper, sliced
1 sm. green bell pepper, sliced
1/2 tsp vegetable oil
1/2 tsp. Creole seasoning
1 TBSP worcestershire sauce
cooked and shredded pot roast
Hoagie Rolls, split
Provolone Cheese slices

Saute the first 3 ingredients in hot oil in a non-stick pan. Sprinkle with the creole seasoning and worcestershire sauce. Spoon the shredded pot roast and bell pepper mixture evenly onto the bottoms of the rolls and top with cheese. Replace the tops of the rolls and place on a baking sheet. Broil for 2-3 minutes until the cheese is melted and the top of the rolls are brown.

That is it. Isn’t that easy? And they are great. You can either serve them with some of the left-over gravy from the first cooking of the pot roast or with steak sauce. Both ways work, although we all seem to like it with steak sauce a little better. Goes great with chips or fries…or potato salad…or anything you come up with.

  2. If and when I have leftover pot roast, I like to make hot roast beef sandwiches, and if there is lots leftover, then I make vege soup (no matter what itme of the year) I do not know if the kids would like the sandwiches, but I know that I would…Will have to try it sometime.

  3. You have left over pot roast? Hummmm not much left over in this house… LOL…

    That sounds like a great way to make a new meal. Some of my better meals are one only made, left over dishes! It is fun to create meals from left overs dont ya think? One of a kind and probably the only time ever made…. but this one is now a recipe so not a one time meal….
