I had to use up some of the fresh produce I have on hand because I know that if I don’t when I get back it will be ruined. So, here is something I threw together tonight.
Roasted Onion & Artichokes:
I used one can of quartered artichoke hearts
1 vidalia onion
2 tomatoes
salt
pepper
olive oil
parsley
I just threw everything in a baking dish and tossed it around and roasted it in the oven on 350 degrees for about 40 minutes. Gosh it smells delicious!
