Last night I tried out a new recipe. I was unsure of how it would fare against the reviews of the family but I must say…we all loved it. I knew that I would like it due to the fact that it has some of my favorite ingredients, artichokes and sun-dried tomatoes. Not everyone likes artichokes but I think even if you don’t you would still like this recipe.

Sun-dried Tomato Artichoke Chicken:

4 Chicken breast halves ( I used the thin cut ones)
2 TBSP Olive Oil
1 pkg french onion soup mix
2 cloves garlic, finely chopped
1/3 cup chopped, drained sun-dried tomatoes in oil
1 (6oz) jar marinated artichoke hearts, undrained

Place the chicken in a baking dish. Combine all of the remaining ingredients and pour over the chicken. Bake at 350 degrees for about 30 minutes or until the chicken is cooked through.

I wish I had taken a picture for you. It turns out to be a rather pretty dish, something I would serve to company for sure. I do wish I had used a little more sun-dried tomatoes. I paired it with rice and steamed vegetables but I think it would do really well with salad and croissants.
