sweet potato biscuits

This is something my dad used to make for us when he was still alive. It was something you could call and say ” Hey Dad, I would really like some of your biscuits” he would grumble, he would complain, but he would always make them. The reason he hated to make them is because after they come out of the oven you have to cut them open and butter each one, individually. Hurts the hands handling so many hot biscuits. But, the joy you get out of eating just one…well, that more than makes up for having to handle them hot. And listen, don’t skimp on the butter. I don’t care that you are watching calories, or fat grams, or whatever…don’t skimp on the butter! Oh, and they are kinda like potato chips, you can’t eat just one!

The ingredients are simple. For 1 batch you will need:

2 Sweet potatoes, baked and cooled

2 cups of self-rising flour

2 TBSP of shortening

2/3 cup buttermilk or regular milk

Mix everything together except the sweet potatoes and make a dough. You can use whatever your favorite biscuit recipe is. I am estimating on my amounts for those who do not have a favorite biscuit recipe.

Mash the sweet potatoes up in a seperate bowl

Then mix the two together. Now, it is going to be sticky so make sure you have extra flour to coat your hands out.

Make your biscuits and place them on a baking sheet, bake @ 425 degrees until lightly browned on top.

Then cut open, butter, dive in!

Now, once you have them all buttered and place in an air-tight container (if there is any left) here is what happens next. You get up early the next morning so that you guarantee that you get a left-over biscuit. Place it on a plate, open it up….then sprinkle it with brown sugar and cinnamon. Microwave for 15-20 seconds. Mmmmm…you get the best breakfast!

Now, can you guess what I am doing? Yep, eating a sweet potato biscuit!
