Last night we celebrated Mother’s Day with my whole family. Yes, I know it was early but that was the only time everyone could be here. It was lots of fun!! All of the adults got to sit at the same table for once, now that I have inherited my grandmother’s very LARGE table. All of the kids had a great time and completely wore themselves out. Even Roxie had some company and playmates.
This is Maddy. She belongs to my younger sister and her girls.
Roxie was unsure of little Maddy to begin with. Roxie is so big and Maddy is so small…and about the size of Roxie’s “babies” that she squeaks constantly. We were all afraid that Roxie might try and find Maddy’s squeaker. They actually all did really well together. I think Roxie couldn’t understand why Maddy didn’t want to play with her.
The meal last night was by request of my Mother. She wanted Black Beans and Rice, her most favorite. And I haven’t fixed it for her in awhile.
What is Black Beans and Rice you ask…well, basically what it sounds like.
I take 2 cups of water and boil it, add 1 cup of rice. Once the rice has cooked I add in 1 or 2 cans of black beans, depends on how many beans you want. Then on a plate I place a layer of tortilla chips, a layer of the black beans and rice, a layer of shredded cheese, lettuce, then homemade Pico de Gallo, then sour cream. You can add salsa on top if you want.
It is simple and ohhh sooo good. Everyone that has ever eaten it loves it so if you ever need something that is really easy to fix, sure to impress and very tasty you should try this.
