
If you have never had fried cabbage, you just don’t know what you are missing! I am not a big fan of boiled cabbage…I would rather have it raw or fried. So, here is how I do fried cabbage:

You need cabbage, an onion, sugar, garlic, salt and pepper

Chop up your cabbage and onion, mix all ingredients together.
Here is the tricky part, you need to use the largest pan that you can fry in. I am using my dutch oven because you can fry in it and it holds a LOT. See, how my pot is full? It won’t be for long…

See, it cooks down pretty quickly.

And after all is said and done, you are going to think there won’t be enough to go around. Make sure you scrap all the brown bits of goodness off the bottom of the pan and stir in, that is part of what makes it so good. Everything caramelizes and the flavors meld together and it just becomes a pot of gold!
FRIED CABBAGE
Cabbage, sliced into small pieces
Onion, diced
1/2 cup sugar (sometimes a whole cup depending on how much cabbage)
2 cloves of garlic, diced
Salt and pepper to taste
Place a small amount of olive oil in a LARGE fry pan and heat on high, add cabbage mixed with all other ingredients and fry for about 10-15 minutes. You will know when it is done.
I also like to add bacon sometimes, or corned beef
Yummm, we had that for supper tonight along with white beans, corn bread, fried potatoes, sliced tomatoes and onions. Sounds real healthy doesn’t it…Oh well…I needed some soul food tonight.

Good morning jillybean. I also fry up cabbage with onion and garlic and mix it with cooked noodles and from there the list is endless that can be added – shrimp, sausage, alfredo sauce, ect and last week I added some summer squash. Oh dear I have not eaten yet today, so must go get something to eat!

I have about a dozen red cabbages in the garden. I may just try this. In Korea they call it chimche, and it is VERY spicy.
