Yummm! Tonight is the first time we have tried this, it turned out really good. Rave reviews from everyone. A couple of comments about it though. I would not add more zest than it calls for. We did half with the recommended amount and half with more than recommended. We all love citrus fruits so we thought perhaps more might be better…not. I also mixed parmesean cheese in with half, half without…definately a good addition. So, it can be altered some to suit your taste buds but it is definately worth trying.

1 lemon
1 orange
1 pouch Shake N’ Bake original
4 small boneless skinless chicken breast halves ( I used chicken tenders )
Preheat oven to 400 degrees. Zest half of each of the fruits and add to the Shake N’ Bake mix. Coat chicken evenly with the mix. Cut the fruit into thin slices and line the bottom of a foil lined baking dish with the slices overlapping. Place the chicken on top and Bake for 30 minutes.
I served this with a tomato/onion salad with a light balsamic vinegarette dressing but it would go with just about anything you wanted to pair it with, perhaps the macaroni and cheese pie would be really good.

i’m american but i moved to italy just over a year ago and it’s really hard to find things to make american food with. a lot of people say to put pre-made things in (just like this, but to make your own shake n bake is easy. not like lime aide and stuff like that.) i can so make this for my in-laws (which are italian and finish) and i’m sure they’ll love it.

Filet mignon!
A whole filet is a whole beef tenderloin basically, it is the cut of meat used to cut filet mignons out of. I cook it whole and then slice it. It is so melt in your mouth wonderful. To absolutely die for! Everyone always wants an invite when that is on the table. Perhaps it will be posted on the blog one day.
jillybean-i was waiting for that invite! never know when i might come that way but it will be a while since i have to go to maine and north carolina to visit family and gas is SO expensive! looks good. owning a restaurant is a good dream. what is a whole filet?
mom, i am an ok cook when i really really try. hopefully i don’t burn stuff when company comes. just ask liz. you got an old fashioned guy that still is stuck with man/woman traditional roles.
You know Jean, most men that do cook are really good cooks. My dad used to do all the cooking when we were growing up…that is where I learned a lot about being in the kitchen. And I would much rather have eaten his cooking than my mothers ( but shhhh, don’t tell her that)

LOL, no…definately not a chef, but I do dream of owning a restaurant some day. This recipe is so easy though and it is quick. You should surprise them one day. Or just hop in the car and run down and I will treat you one evening…just give me warning and I will do a whole filet, that is the best meal EVER but it takes 5 hours so I have to have notice on that one
Are you a chef? My family would drop dead if I ever cooked something like this. Tonight it was TV dinners for the Jimster. Sweet and sour chicken. He’s happy. Poor guy. I had a deli sandwich. Looks yummy!
