1 pouch Shake N’ Bake original
4 small boneless skinless chicken breast halves ( I used chicken tenders )
Preheat oven to 400 degrees. Zest half of each of the fruits and add to the Shake N’ Bake mix. Coat chicken evenly with the mix. Cut the fruit into thin slices and line the bottom of a foil lined baking dish with the slices overlapping. Place the chicken on top and Bake for 30 minutes.
I served this with a tomato/onion salad with a light balsamic vinegarette dressing but it would go with just about anything you wanted to pair it with, perhaps the macaroni and cheese pie would be really good.Print This Post
