Roasted asparagus is a favorite around here. It is easy, healthy and ohhh so good!
Take a bundle of asparagus and rinse it, once dry lay it out in a glass baking dish.
Sprinkle it with some course salt and some freshly ground pepper.
Drizzle with a little olive oil.
The cut a lemon and drizzle the juice over the top.
Bake on 400 degrees for about 15 minutes.
There you have it…a wonderful side dish to compliment any meal. I could eat the whole pan and not share a bite, but then Smartypants would rebel. He ate 14 sticks of asparagus alone the other night. What 10 year old boy do you know that eats lots of green stuff? It is by far his favorite green vegetable, second to spinach. I will have to share his favorite spinach recipe soon. Getting kids to eat green stuff can sometimes be challenging but it can be done if you cook it right. Oh and here is a warning…I wouldn’t use a metal pan unless that is all you have, and if I had to I would line it with foil (at least 2 layers). Why you ask? Well, it will ruin your pan…something about the salt, oil, and acidic acid from the lemon. It really makes an awful mess and you will have to throw your pan away…just trust me on this one. I had to find out the hard way.
