I found a new recipe this weekend….corn chowder. I think I have foundered myself on this wonderful dish. It is super easy to make and is inexpensive to boot. What better could you ask for in a recipe.
2 lbs corn ( I used frozen shoepeg)
2 stalks celery (diced)
1 onion (diced)
2 cloves of garlic (minced)
Diced ham (optional)
Salt (to taste)
Pepper (to taste)
Paprika ( to taste)
Thyme ( to taste)
Some chicken broth
I melted a stick of butter in my stock pot, added the celery, onion and garlic and let it saute for a couple of minutes, then added the corn, ham, chicken broth and seasoning. Let it simmer for about 30 minutes and you are done. I didn’t really measure anything. I just added until it tasted right to me, although…I knew I didn’t want my “sauce” to be thin, I wanted a heartier base so I was careful about how much liquid I added. If you get it too thin you could always thicken it with flour though.

Great…and it is definately chowder weather. I like to add hot sauce to mine to give it some kick.
